🍕 Polenta Pizza with Goat Cheese, Figs and Grapes

Ingredients
- Salt
- 15 g Butter (1 tbsp)
- 150 g cornmeal (polenta)
- 1 blue fig
- 150 g red seedless grapes
- 150 g goat cheese log (45% fat in dry matter)
- 150 g sour cream
- pepper
- 1 handful herbs (e.g. rosemary, thyme, basil; 5 g)
- pink peppercorns
- 1 tsp liquid honey
Instructions
- 1. Put 500 milliliters of water, one teaspoon of salt, and a piece of butter into a pot.
- 2. Bring the mixture in the pot to a boil.
- 3. Stir the cornmeal into the boiling water with a whisk.
- 4. Remove the pot from the heat.
- 5. Let the polenta mixture swell for 20 minutes.
- 6. Stir the mixture occasionally during this time.
- 7. Wash the fig under running water.
- 8. Slice the washed fig into thin pieces.
- 9. Wash the grapes under running water.
- 10. Pat the grapes dry with a kitchen towel.
- 11. Slice the goat cheese.
- 12. Line a baking sheet with baking paper.
- 13. Spread the polenta evenly on the baking paper.
- 14. Shape the polenta into a round flatbread.
- 15. Spread sour cream over the polenta.
- 16. Lightly salt the polenta.
- 17. Lightly pepper the polenta.
- 18. Place the fig slices on the polenta.
- 19. Place the goat cheese slices on the polenta.
- 20. Distribute the grapes on the pizza.
- 21. Preheat the oven to 200 degrees Celsius.
- 22. Bake the pizza in the preheated oven for 25 minutes.
- 23. Wash the herbs under running water.
- 24. Pat the herbs dry with a kitchen towel.
- 25. Pick the leaves off the herbs.
- 26. Remove the pizza from the oven.
- 27. Sprinkle the pizza with the prepared herbs.
- 28. Sprinkle the pizza with peppercorns.
- 29. Drizzle the pizza with honey.
- 30. Cut the pizza into pieces.
