🍕 Mexican Polenta Pizza with Fried Eggs

Ingredients
- 200 g red bell peppers (1 red bell pepper)
- 1 onion
- 2 garlic cloves
- 1 red chili pepper
- 500 g tomatoes
- 3 tbsp olive oil
- 1 tbsp balsamic vinegar
- salt
- pepper
- 1 l classic vegetable broth
- 250 g cornmeal
- 6 eggs
Instructions
- 1. Halve the bell pepper and remove the seeds. Wash the peppers and cut them into small cubes.
- 2. Peel the onion and garlic. Finely chop both ingredients.
- 3. Halve the chili pepper lengthwise and remove the seeds. Wash and finely chop it.
- 4. Dip the tomatoes briefly into boiling water. Remove them immediately and shock them with cold water.
- 5. Peel the skin off the tomatoes. Roughly chop the flesh.
- 6. Heat one tablespoon of oil in a pot.
- 7. Add the bell pepper cubes, onion, garlic, and chili to the pot. Sauté the vegetables briefly.
- 8. Add the chopped tomatoes. Let the mixture simmer on low heat for five minutes.
- 9. Season the sauce with vinegar, salt, and pepper.
- 10. Set aside the pepper salsa.
- 11. Bring the broth to a boil in a pot.
- 12. Remove the pot from the heat.
- 13. Sprinkle the cornmeal (polenta) into the hot broth while stirring constantly.
- 14. Place the pot back on the stove.
- 15. Let the polenta swell on low heat for about five minutes, stirring occasionally.
- 16. Remove the pot from the heat.
- 17. Let the polenta rest for another five minutes, stirring it several times in between.
- 18. Season the polenta to taste with salt.
- 19. Brush a baking sheet with the remaining oil.
- 20. Place the polenta on the baking sheet.
- 21. Spread the polenta with a rubber spatula into a square of approximately 32 by 32 centimeters.
- 22. Let the polenta base cool down slightly.
- 23. Spread the pepper salsa evenly over the polenta.
- 24. Preheat the oven to 200 degrees Celsius (convection: 180 degrees, gas: setting 3).
- 25. Place the tray on the lowest rack.
- 26. Bake the pizza for about ten minutes.
- 27. Crack the eggs.
- 28. Gently slide the eggs onto the pizza, similar to fried eggs.
- 29. Bake the pizza for another ten minutes.
- 30. Remove the pizza from the oven.
- 31. Cut the pizza into six pieces.
