  1. 1. Place the beans in water the day before and let them soak overnight.
  2. 2. Cook the soaked beans in fresh water until tender.
  3. 3. Allow the cooked beans to cool down.
  4. 4. Grind the cooled beans through a meat grinder to create a fine puree.
  5. 5. Add goose fat, sour cream, yeast, and a handful of flour to the bean puree.
  6. 6. Knead the ingredients well until a homogeneous mass is formed.
  7. 7. Cover the bowl and let the dough rise in a warm place for about 45 minutes.
  8. 8. Season the dough with salt and pepper to taste.
  9. 9. Add an egg to the dough.
  10. 10. Knead the remaining flour into the dough until it is elastic.
  11. 11. Cover the dough and let it rise for another 30 minutes.
  12. 12. Dust your hands with a little flour.
  13. 13. Form small balls from the dough.
  14. 14. Place the dough balls on a baking sheet lined with baking paper.
  15. 15. Cut a cross shape into the top of the balls.
  16. 16. Brush the balls with egg yolk.
  17. 17. Preheat the oven to 200 degrees.
  18. 18. Bake the pogatschen in the preheated oven for about 15 to 20 minutes.
