🍽️ Crispy Bean Pogatschen

Ingredients
- 500 g flour
- 200 g red beans
- 150 g lard (or butter)
- 42 g fresh yeast (1 cube)
- 1 tsp salt
- 1 pinch pepper
- 100 ml sour cream
- 1 egg
- 1 egg yolk (for brushing)
Instructions
- 1. Place the beans in water the day before and let them soak overnight.
- 2. Cook the soaked beans in fresh water until tender.
- 3. Allow the cooked beans to cool down.
- 4. Grind the cooled beans through a meat grinder to create a fine puree.
- 5. Add goose fat, sour cream, yeast, and a handful of flour to the bean puree.
- 6. Knead the ingredients well until a homogeneous mass is formed.
- 7. Cover the bowl and let the dough rise in a warm place for about 45 minutes.
- 8. Season the dough with salt and pepper to taste.
- 9. Add an egg to the dough.
- 10. Knead the remaining flour into the dough until it is elastic.
- 11. Cover the dough and let it rise for another 30 minutes.
- 12. Dust your hands with a little flour.
- 13. Form small balls from the dough.
- 14. Place the dough balls on a baking sheet lined with baking paper.
- 15. Cut a cross shape into the top of the balls.
- 16. Brush the balls with egg yolk.
- 17. Preheat the oven to 200 degrees.
- 18. Bake the pogatschen in the preheated oven for about 15 to 20 minutes.
