  1. 1. Place the beans in water the day before and let them soak overnight.
  2. 2. Boil the soaked beans in fresh water until tender.
  3. 3. Allow the cooked beans to cool down.
  4. 4. Pass the cooled beans through a meat grinder or finely mash them into a puree.
  5. 5. Add goose fat, sour cream, yeast, and a handful of flour to the bean puree.
  6. 6. Knead the ingredients well into a homogeneous mixture.
  7. 7. Cover the bowl and let the dough rise in a warm place for about 45 minutes.
  8. 8. Season the risen dough with salt and pepper to taste.
  9. 9. Add one egg to the dough mixture.
  10. 10. Knead the remaining flour into the dough until it becomes elastic.
  11. 11. Cover the dough again and let it rise for another 30 minutes.
  12. 12. Dust a work surface with flour.
  13. 13. Roll out the dough on the floured surface to a thickness of about 1.5 centimeters.
  14. 14. Cut out the pogatschen using a cutter about 4 centimeters in diameter.
  15. 15. Shape the dough pieces into teardrop shapes if desired.
  16. 16. Place the pogatschen on a baking sheet lined with baking paper.
  17. 17. Make several cuts on the top surface of the pogatschen.
  18. 18. Brush the pogatschen with egg yolk.
  19. 19. Preheat the oven to 200 degrees.
  20. 20. Bake the pogatschen in the preheated oven for 15 to 20 minutes.
