🍽️ Crispy Bean Pogatschen

Ingredients
- 500 g flour
- 200 g red beans
- 150 g lard (or butter)
- 1 cube fresh yeast
- 1 tsp salt
- 1 pinch pepper
- 100 ml sour cream
- 1 egg
- 1 egg yolk (for brushing)
Instructions
- 1. Place the beans in water the day before and let them soak overnight.
- 2. Boil the soaked beans in fresh water until tender.
- 3. Allow the cooked beans to cool down.
- 4. Pass the cooled beans through a meat grinder or finely mash them into a puree.
- 5. Add goose fat, sour cream, yeast, and a handful of flour to the bean puree.
- 6. Knead the ingredients well into a homogeneous mixture.
- 7. Cover the bowl and let the dough rise in a warm place for about 45 minutes.
- 8. Season the risen dough with salt and pepper to taste.
- 9. Add one egg to the dough mixture.
- 10. Knead the remaining flour into the dough until it becomes elastic.
- 11. Cover the dough again and let it rise for another 30 minutes.
- 12. Dust a work surface with flour.
- 13. Roll out the dough on the floured surface to a thickness of about 1.5 centimeters.
- 14. Cut out the pogatschen using a cutter about 4 centimeters in diameter.
- 15. Shape the dough pieces into teardrop shapes if desired.
- 16. Place the pogatschen on a baking sheet lined with baking paper.
- 17. Make several cuts on the top surface of the pogatschen.
- 18. Brush the pogatschen with egg yolk.
- 19. Preheat the oven to 200 degrees.
- 20. Bake the pogatschen in the preheated oven for 15 to 20 minutes.
