🍽️ Classic Hungarian Pörkölt

Ingredients
- 800 g Goulash meat (from the pig)
- 3 large onions
- 8 tomatoes
- 2 red bell peppers
- 4 garlic cloves
- 500 ml meat broth
- 2 tbsp paprika powder (hot)
- 1 tbsp paprika powder (sweet)
- salt
- pepper
- 4 tbsp clarified butter
Instructions
- 1. Peel the onions and cut them in half. Cut the onion halves into coarse cubes.
- 2. Wash the peppers and cut them in half. Remove the seeds and the white inner membrane. Cut the peppers into cubes.
- 3. Wash the tomatoes and remove the hard stem at the top. Cut the tomatoes in half and dice them.
- 4. Peel the garlic cloves and chop them finely.
- 5. Heat the ghee in a large pot. Brown the meat in batches on all sides until it is brown. Remove the meat from the pot and set it aside.
- 6. Add the onions and peppers to the hot fat. Sauté the vegetables briefly.
- 7. Pour the broth over the vegetables and meat. Cover the pot.
- 8. Simmer the pörkölt on medium heat for about 40 minutes.
- 9. Remove the lid from the pot. Increase the heat to reduce the liquid by half.
- 10. Add the diced tomatoes to the pot. Continue to cook the sauce until it thickens.
- 11. Season the dish with paprika powder, salt, and pepper to taste.
- 12. Serve the pörkölt hot with potatoes.
