Ingredients
- 1 kg beef fillet
- 2 carrots
- 1 leek stalk
- 2 parsley roots
- 12 small potatoes
- 0.25 stalk horseradish
- 1 bunch thyme
- salt
- peppercorns
- bay leaf
- juniper berry
- clove
Instructions
- 1. Peel the potatoes and cut them into quarters.
- 2. Peel the carrots.
- 3. Clean the leek and wash it thoroughly.
- 4. Peel the parsley root.
- 5. Cut all the prepared vegetables into bite-sized pieces.
- 6. Add the beef fillet, the vegetables, the spices and the thyme sprigs to a pot of boiling water.
- 7. Reduce the heat so that the water is just simmering gently.
- 8. Let the meat and vegetables cook in the liquid for about 30 minutes.
- 9. Carefully remove the meat.
- 10. Let the meat rest briefly.
- 11. Slice the meat.
- 12. Arrange the vegetables on the plates.
- 13. Place the meat slices on top of the vegetables.
- 14. Grate fresh horseradish over the dish.
- 15. Garnish the dish with fresh thyme.
- 16. Serve the dish.
