  1. 1. Peel the potatoes and cut them into quarters.
  2. 2. Peel the carrots.
  3. 3. Clean the leek and wash it thoroughly.
  4. 4. Peel the parsley root.
  5. 5. Cut all the prepared vegetables into bite-sized pieces.
  6. 6. Add the beef fillet, the vegetables, the spices and the thyme sprigs to a pot of boiling water.
  7. 7. Reduce the heat so that the water is just simmering gently.
  8. 8. Let the meat and vegetables cook in the liquid for about 30 minutes.
  9. 9. Carefully remove the meat.
  10. 10. Let the meat rest briefly.
  11. 11. Slice the meat.
  12. 12. Arrange the vegetables on the plates.
  13. 13. Place the meat slices on top of the vegetables.
  14. 14. Grate fresh horseradish over the dish.
  15. 15. Garnish the dish with fresh thyme.
  16. 16. Serve the dish.
