🍽️ Gentle Poached Salmon on Creamy Savoy Cabbage

Ingredients
- 1 kg Savoy cabbage
- 2 tbsp butter
- salt
- pepper (from the mill)
- 1 untreated lemon (juice and zest)
- 125 ml vegetable broth
- 100 ml whipping cream
- 600 g salmon fillet (4 pieces approx. 150 g each)
Instructions
- 1. Remove the outer leaves from the savoy cabbage.
- 2. Cut the savoy cabbage lengthwise into quarters.
- 3. Cut out the hard core from the center.
- 4. Cut the savoy cabbage quarters crosswise into thin strips.
- 5. Heat butter in a pan and sauté the savoy cabbage in it.
- 6. Season the vegetables to taste.
- 7. Add the lemon zest.
- 8. Pour the broth and cream over the vegetables.
- 9. Cover the pan and let the savoy cabbage simmer for about 15 to 20 minutes.
- 10. Bring salted water to a boil in a large pot.
- 11. Stir half of the lemon juice into the boiling water.
- 12. Place the salmon pieces into the gently simmering water.
- 13. Let the salmon cook for about 6 to 8 minutes.
- 14. Season the savoy cabbage with salt, pepper, and the remaining lemon juice.
- 15. Plate the salmon together with the savoy cabbage.
- 16. Serve the dish immediately.
