🍽️ Gentle Poached Fish with Aromatic Broth

Ingredients
- 0.5 lemon
- sea salt
- 1 tbsp peppercorns
- 2 bay leaves
- pepper
- 8 cod cutlets (approx. 150 g each)
Instructions
- 1. Squeeze the lemon to extract the juice.
- 2. Add the lemon juice, one teaspoon of salt, the peppercorns, and the bay leaves to a pot.
- 3. Heat about one liter of water in this pot until it is hot.
- 4. Let the spices and juice steep in the hot water for about ten minutes.
- 5. Rinse the fish cutlets thoroughly.
- 6. Pat the fish cutlets dry with a kitchen towel.
- 7. Warm the fish broth to about 80 degrees Celsius, just below the boiling point.
- 8. Carefully place the fish cutlets into the hot broth.
- 9. Cover the pot with a lid.
- 10. Poach the fish for ten to fifteen minutes until it is cooked through.
- 11. Remove the cooked fish cutlets from the liquid using a slotted spoon.
- 12. Serve the fish with mustard sauce if desired.
