🍰 Gentle Mirabelle Plums in Vanilla Syrup with Mint Yogurt

Ingredients
- 300 g Mirabelle plums
- 1 vanilla pod
- 150 ml white wine (or grape juice)
- 4 tbsp mild honey
- 2 tbsp mint syrup
- 150 g yogurt (1.5% fat)
Instructions
- 1. Thoroughly wash the mirabelle plums under running water.
- 2. Remove the pits from the fruits.
- 3. Slice the vanilla pod lengthwise.
- 4. Scrape out the inner pulp with the back of a knife.
- 5. Add the white wine, honey, vanilla pod, and pulp to a pot.
- 6. Bring the mixture to a boil.
- 7. Add the pitted mirabelle plums to the boiling liquid.
- 8. Reduce the heat to a low setting.
- 9. Let the fruits cook gently for about 10 minutes without vigorous bubbling (poach).
- 10. Carefully remove the mirabelle plums from the syrup using a slotted spoon.
- 11. Let the fruits and the remaining liquid cool down separately.
- 12. Stir the mint syrup vigorously into the yogurt.
- 13. Fill the serving glasses with the cooled mirabelle plums and some of the cooled syrup.
- 14. Pour the mint yogurt mixture over the fruits.
