  1. 1. Open the cardamom pods and remove the seeds.
  2. 2. Break the star anise into small pieces.
  3. 3. Squeeze the lemon to extract the juice.
  4. 4. Add the cardamom seeds, star anise pieces, three tablespoons of lemon juice, the orange juice, and the honey to a pot.
  5. 5. Bring the liquid to a boil.
  6. 6. Let the mixture simmer for ten minutes over low heat.
  7. 7. Peel the clementines carefully.
  8. 8. Remove as much of the white pith as possible without damaging the fruit.
  9. 9. Place the clementines snugly side by side in a second pot.
  10. 10. Pour the rose water into the warm spiced syrup.
  11. 11. Pour the hot liquid over the fruits until they are completely covered.
  12. 12. Place the pot on the stove.
  13. 13. Let the clementines poach in the hot, but not boiling, liquid.
  14. 14. Remove the pot from the heat.
  15. 15. Allow the fruits to cool down.
  16. 16. Cover the pot and let the clementines steep overnight.
  17. 17. Lift the clementines out of the syrup before serving.
  18. 18. Serve the fruits with ice cream or whipped cream, for example.
