🍰 Gently Poached Clementines with Spiced Syrup

Ingredients
- 2 cardamom pods
- 1 star anise
- 75 g honey
- 1 lemon
- 600 ml orange juice
- 8 clementines
- 5 drops rose water
Instructions
- 1. Open the cardamom pods and remove the seeds.
- 2. Break the star anise into small pieces.
- 3. Squeeze the lemon to extract the juice.
- 4. Add the cardamom seeds, star anise pieces, three tablespoons of lemon juice, the orange juice, and the honey to a pot.
- 5. Bring the liquid to a boil.
- 6. Let the mixture simmer for ten minutes over low heat.
- 7. Peel the clementines carefully.
- 8. Remove as much of the white pith as possible without damaging the fruit.
- 9. Place the clementines snugly side by side in a second pot.
- 10. Pour the rose water into the warm spiced syrup.
- 11. Pour the hot liquid over the fruits until they are completely covered.
- 12. Place the pot on the stove.
- 13. Let the clementines poach in the hot, but not boiling, liquid.
- 14. Remove the pot from the heat.
- 15. Allow the fruits to cool down.
- 16. Cover the pot and let the clementines steep overnight.
- 17. Lift the clementines out of the syrup before serving.
- 18. Serve the fruits with ice cream or whipped cream, for example.
