Ingredients
- 250 g spelt flour Type 1050
- 65 g raw cane sugar
- 1 pinch salt
- 1 egg (size M)
- 110 g butter (from pasture-raised cows)
Instructions
- 1. Mix the flour and raw cane sugar in a large mixing bowl. Then evenly distribute the salt, egg, and butter on top.
- 2. Process the ingredients using the dough hooks of a hand mixer. Start on the lowest speed setting. Only increase to the highest speed once the flour is no longer flying around, and knead everything into crumbly pieces.
- 3. Quickly shape the crumbs into a smooth shortcrust pastry using your hands. Shortcrust pastry is a crumbly dough that is easy to roll out. Cover the dough and let it rest in the refrigerator for about 30 minutes.
- 4. Now continue processing the shortcrust pastry as directed by your specific cookie recipe.
