🍽️ Marzipan Cookie Diamonds

Ingredients
- 150 g Butter
- 100 g Sugar
- 100 g Marzipan base
- 3 Eggs
- 250 g Flour
- 50 g ground almond kernels (peeled)
- 100 g Apricot jam
- 100 g Redcurrant jelly
- Powdered sugar (for dusting)
Instructions
- 1. Preheat the oven to 350°F (180°C) using top and bottom heat.
- 2. Cut the butter into small pieces.
- 3. Cut the marzipan raw mass into small pieces.
- 4. Beat the butter pieces, sugar, and marzipan pieces together with an electric hand mixer until creamy and smooth.
- 5. Stir in the eggs one by one.
- 6. Gently fold the flour and almonds into the dough.
- 7. Fill the dough into a piping bag fitted with a round tip (1 cm diameter).
- 8. Line a baking tray with baking paper.
- 9. Pipe diamond shapes (approx. 5 to 6 cm large) from the dough onto the tray.
- 10. Bake the cookies in the preheated oven for approx. 12 minutes.
- 11. Remove the tray from the oven.
- 12. Let the cookies cool down completely on the tray.
- 13. Warm the apricot jam separately in a small saucepan.
- 14. Warm the jelly separately in another small saucepan.
- 15. Pass the warmed apricot jam through a fine sieve to make it smooth.
