Ingredients
- 300 g flour
- 1 tsp baking powder
- 225 g butter
- 225 g sugar
- 2 eggs
- 1 small pinch organic lemon zest
- 1 vanilla pod (seeds)
- 1 pinch salt
- flour (for working)
- coarse sugar (for sprinkling)
Instructions
- 1. Mix the flour with the baking powder and pour the mixture onto a clean work surface.
- 2. Place the butter in small pieces on the outer edge of the flour mound.
- 3. Add the sugar, eggs, lemon zest, vanilla paste, and salt to the center of the well.
- 4. Quickly knead the ingredients together into a smooth and pliable dough.
- 5. Wrap the dough tightly in cling film and place it in the refrigerator for about 30 minutes.
- 6. Preheat the oven to 180 degrees Celsius fan-forced.
- 7. Line a baking tray with baking paper or grease it lightly with oil.
- 8. Lightly dust the work surface with flour and roll out the dough to a thickness of 4 to 5 millimeters.
- 9. Cut out any shapes you like from the dough and place them on the prepared tray.
- 10. Generously sprinkle the cookies with sugar.
- 11. Bake the cookies for about 10 minutes until they are lightly golden yellow.
- 12. Let the cookies cool completely on a wire rack.
