  1. 1. Mix the flour with the sugar and the salt in a large bowl.
  2. 2. Dissolve the yeast in 200 milliliters of lukewarm water.
  3. 3. Add the yeast-water mixture and the oil to the flour.
  4. 4. Knead everything quickly with your hands until you have a smooth dough.
  5. 5. If the dough is too dry, add a little water, or if it is too sticky, add a little flour.
  6. 6. Place the dough in a bowl, cover it, and let it rise in a warm place for about 1 hour.
  7. 7. Peel the shallot and the garlic and chop them finely.
  8. 8. Sauté the onion mixture in hot oil until translucent.
  9. 9. Add the puréed tomatoes to the pan.
  10. 10. Let the sauce simmer gently for about 15 minutes, stirring occasionally.
  11. 11. Add the sugar and season the sauce with salt and pepper.
  12. 12. Drain the mozzarella and slice it into thin slices.
  13. 13. Wash the tomatoes, remove the stem area, and slice them as well.
  14. 14. Drain the feta cheese and cut it into small cubes.
  15. 15. Preheat the oven to 200 degrees Celsius with top and bottom heat.
  16. 16. Line a baking sheet with baking paper.
  17. 17. Knead the pizza dough once more briefly.
  18. 18. Divide the dough into about 25 equal pieces.
  19. 19. Shape each piece into a ball.
  20. 20. Roll out the dough balls to about 7 centimeters in diameter and form a small edge.
  21. 21. Spread one tablespoon of tomato sauce on each mini pizza.
  22. 22. Top each pizza with a slice of mozzarella and a tomato slice.
  23. 23. Distribute the feta cheese cubes over the pizzas.
  24. 24. Bake the pizzas in the oven for about 15 minutes until golden brown.
