🍽️ Mini Pizzas with Mozzarella and Feta

Ingredients
- 400 g flour
- 1 tsp sugar
- 1 tsp salt
- 0.5 cube yeast
- 2 tbsp olive oil
- 1 shallot
- 1 clove garlic
- 1 tbsp olive oil
- 300 g pureed tomatoes (can)
- 1 tsp sugar
- salt
- pepper
- 4 mozzarella balls (each 125 g)
- 5 tomatoes
- 200 g feta cheese
Instructions
- 1. Mix the flour with the sugar and the salt in a large bowl.
- 2. Dissolve the yeast in 200 milliliters of lukewarm water.
- 3. Add the yeast-water mixture and the oil to the flour.
- 4. Knead everything quickly with your hands until you have a smooth dough.
- 5. If the dough is too dry, add a little water, or if it is too sticky, add a little flour.
- 6. Place the dough in a bowl, cover it, and let it rise in a warm place for about 1 hour.
- 7. Peel the shallot and the garlic and chop them finely.
- 8. Sauté the onion mixture in hot oil until translucent.
- 9. Add the puréed tomatoes to the pan.
- 10. Let the sauce simmer gently for about 15 minutes, stirring occasionally.
- 11. Add the sugar and season the sauce with salt and pepper.
- 12. Drain the mozzarella and slice it into thin slices.
- 13. Wash the tomatoes, remove the stem area, and slice them as well.
- 14. Drain the feta cheese and cut it into small cubes.
- 15. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 16. Line a baking sheet with baking paper.
- 17. Knead the pizza dough once more briefly.
- 18. Divide the dough into about 25 equal pieces.
- 19. Shape each piece into a ball.
- 20. Roll out the dough balls to about 7 centimeters in diameter and form a small edge.
- 21. Spread one tablespoon of tomato sauce on each mini pizza.
- 22. Top each pizza with a slice of mozzarella and a tomato slice.
- 23. Distribute the feta cheese cubes over the pizzas.
- 24. Bake the pizzas in the oven for about 15 minutes until golden brown.
