  1. 1. Put the flour into a large bowl.
  2. 2. Make a small well in the center.
  3. 3. Crumble the yeast into the well.
  4. 4. Mix the yeast with the sugar and 100 milliliters of lukewarm water.
  5. 5. Let the yeast mixture rest, covered, for about 15 minutes.
  6. 6. Now add the remaining dough ingredients.
  7. 7. Knead the dough until it pulls away from the sides of the bowl.
  8. 8. Let the dough rest, covered, for another 45 minutes.
  9. 9. Meanwhile, clean and wash the spinach.
  10. 10. Place the wet spinach in a pot and heat it on high until it wilts.
  11. 11. Put the spinach in a colander and let it drain.
  12. 12. Peel the shallots and the garlic.
  13. 13. Finely chop the shallots and garlic.
  14. 14. Sauté the vegetables in olive oil until translucent.
  15. 15. Roughly chop the drained spinach.
  16. 16. Mix the spinach with the sautéed vegetables.
  17. 17. Season the mixture with salt, pepper, and nutmeg.
  18. 18. Cut the feta cheese into small cubes.
  19. 19. Fold the feta cubes into the filling.
  20. 20. Knead the dough briefly.
  21. 21. Divide the dough into 8 equal pieces.
  22. 22. Dust your work surface with flour.
  23. 23. Roll each piece of dough into a circle about 15 centimeters in diameter.
  24. 24. Place a portion of filling on one half of a dough circle.
  25. 25. Leave a border of about 1 centimeter around the filling.
  26. 26. Whisk the egg yolk.
  27. 27. Brush the free dough edge with the egg yolk.
  28. 28. Place a second dough circle on top of the filling.
  29. 29. Press the edges of the two dough circles together firmly.
  30. 30. Place the pockets on a baking sheet lined with baking paper.
  31. 31. Brush the top of the pockets with a little egg yolk.
  32. 32. Preheat the oven to 200 degrees Celsius (top and bottom heat).
  33. 33. Bake the pockets for about 25 minutes until golden brown.
