🍕 Crispy Spinach and Feta Pockets

Ingredients
- 400 g flour
- 20 g yeast
- 0.5 tsp sugar
- 200 ml lukewarm water
- 4 tbsp olive oil
- 0.5 tsp salt
- flour (for working)
- 600 g spinach
- 2 shallots
- 1 clove of garlic
- 2 tbsp olive oil
- salt
- pepper (from the mill)
- nutmeg
- 200 g feta cheese
- 1 egg yolk (for brushing)
Instructions
- 1. Put the flour into a large bowl.
- 2. Make a small well in the center.
- 3. Crumble the yeast into the well.
- 4. Mix the yeast with the sugar and 100 milliliters of lukewarm water.
- 5. Let the yeast mixture rest, covered, for about 15 minutes.
- 6. Now add the remaining dough ingredients.
- 7. Knead the dough until it pulls away from the sides of the bowl.
- 8. Let the dough rest, covered, for another 45 minutes.
- 9. Meanwhile, clean and wash the spinach.
- 10. Place the wet spinach in a pot and heat it on high until it wilts.
- 11. Put the spinach in a colander and let it drain.
- 12. Peel the shallots and the garlic.
- 13. Finely chop the shallots and garlic.
- 14. Sauté the vegetables in olive oil until translucent.
- 15. Roughly chop the drained spinach.
- 16. Mix the spinach with the sautéed vegetables.
- 17. Season the mixture with salt, pepper, and nutmeg.
- 18. Cut the feta cheese into small cubes.
- 19. Fold the feta cubes into the filling.
- 20. Knead the dough briefly.
- 21. Divide the dough into 8 equal pieces.
- 22. Dust your work surface with flour.
- 23. Roll each piece of dough into a circle about 15 centimeters in diameter.
- 24. Place a portion of filling on one half of a dough circle.
- 25. Leave a border of about 1 centimeter around the filling.
- 26. Whisk the egg yolk.
- 27. Brush the free dough edge with the egg yolk.
- 28. Place a second dough circle on top of the filling.
- 29. Press the edges of the two dough circles together firmly.
- 30. Place the pockets on a baking sheet lined with baking paper.
- 31. Brush the top of the pockets with a little egg yolk.
- 32. Preheat the oven to 200 degrees Celsius (top and bottom heat).
- 33. Bake the pockets for about 25 minutes until golden brown.
