🍕 Flatbreads with Feta and Olives

Ingredients
- 20 g fresh yeast (0.5 cube)
- 250 g flour
- 0.5 tsp salt
- 1 tbsp olive oil
- 1 small red onion
- 1 clove garlic
- 200 g leek
- 1 tomato
- 4 walnut kernels
- 1 tbsp butter
- 8 black olives (pitted, in oil)
- 4 anchovy fillets (pickled)
- 150 g feta
- salt
- pepper (from the mill)
- dried thyme
- dried rosemary
- olive oil (for drizzling)
Instructions
- 1. Crumble the yeast with your fingers into a small cup.
- 2. Stir the yeast with two tablespoons of lukewarm water.
- 3. Mix the flour with the salt in a large bowl.
- 4. Make a well in the center of the flour mixture.
- 5. Pour the yeast mixture into the well.
- 6. Lightly dust the surface with flour.
- 7. Let the mixture rest for 15 minutes.
- 8. Gradually add just under 100 milliliters of lukewarm water.
- 9. Knead the dough into a smooth mass.
- 10. Cover the dough with a cloth.
- 11. Let the dough rise in a warm place for one hour.
- 12. Peel the onion and the garlic.
- 13. Finely chop the onion and the garlic.
- 14. Clean the leek and wash it.
- 15. Cut the leek into fine rings.
- 16. Wash the tomato and pat it dry.
- 17. Slice the tomato.
- 18. Coarsely chop the walnut kernels.
- 19. Toast the walnuts briefly in a pan without fat.
- 20. Sauté the onion, garlic, and leek in a small pan with the butter for 1 to 2 minutes.
- 21. Preheat the oven to 220 degrees Celsius with top and bottom heat.
- 22. Knead the dough vigorously on a lightly floured surface after the resting period.
- 23. Work the olive oil into the dough.
- 24. Divide the dough into four pieces.
- 25. Roll the pieces into pizzas.
- 26. Place the pizzas on a baking sheet lined with baking paper.
- 27. Top the pizzas with the tomato slices.
- 28. Distribute the leek-onion mixture on top.
- 29. Sprinkle the walnuts over it.
- 30. Add the olives.
- 31. Crumble the anchovy fillets and distribute them.
- 32. Crumble the feta and sprinkle it over.
- 33. Season with salt and pepper.
- 34. Sprinkle the pizzas with the herbs.
- 35. Drizzle everything with a little olive oil.
- 36. Bake the pizzas in the preheated oven on the middle rack for 15 to 20 minutes.
