  1. 1. Mix spelt flour, yeast, and salt in a bowl. Add 100 ml of lukewarm water and knead the dough with the beaters of a hand mixer until it is elastic. Cover the bowl and let the dough rise in a warm place for about 30 minutes.
  2. 2. Let the tomatoes drain on kitchen paper and chop them finely. Mix the chopped tomatoes in a small bowl with tomato paste and herbs.
  3. 3. Wash the cherry tomatoes, pat them dry, and slice them.
  4. 4. Knead the dough briefly again and roll it out on a lightly floured work surface into a rectangle measuring about 40 x 30 cm.
  5. 5. Spread the tomato mixture evenly over the dough. Place the tomato slices on top. Grate the Parmesan and sprinkle it over the tomatoes.
  6. 6. Roll the dough tightly from the long side. Cut the dough roll into 8 slices of equal thickness, each about 2 cm thick.
  7. 7. Line a baking sheet with baking paper and arrange the pizza snails on it. Let them rise for another 15 minutes. Then bake them in the preheated oven at 225 °C (convection: 200 °C, gas: setting 3-4) on the middle rack for about 15 minutes.
