🍕 Moroccan-style Pizza with Minced Meat and Pine Nuts

Ingredients
- 15 g fresh yeast
- 1 pinch sugar
- 250 g flour
- 0.5 tsp salt
- olive oil
- flour (for working)
- 1 onion
- 1 garlic clove
- 500 g lamb mince
- 2 tbsp olive oil
- 1 tbsp tomato paste
- 1 tsp ground cumin
- 1 pinch cinnamon
- 350 g chopped tomatoes (can)
- 2 tbsp pine nuts
- 2 tbsp fresh chopped coriander
- 2 tbsp fresh chopped parsley
- salt
- 4 tbsp yogurt
- 2 tbsp mango chutney
- mint
Instructions
- 1. Crumble the yeast into a small bowl.
- 2. Mix the yeast with a pinch of sugar and 2 tablespoons of lukewarm water.
- 3. Mix the flour with the salt in a large bowl.
- 4. Make a well in the center of the flour mixture.
- 5. Pour the yeast mixture into the well.
- 6. Lightly dust the surface with flour.
- 7. Let the dough rise in a warm place for about 15 minutes.
- 8. Add about 100 milliliters of lukewarm water and 1 to 2 tablespoons of oil.
- 9. Knead the dough into a smooth mass.
- 10. Cover the dough with a cloth.
- 11. Let the dough rise in a warm place for 45 minutes.
- 12. Peel the onions and garlic cloves.
- 13. Finely dice the onions and garlic.
- 14. Fry the minced meat in hot oil until crumbly.
- 15. Add the diced onions and garlic.
- 16. Sauté the vegetables briefly.
- 17. Stir in cumin and cinnamon.
- 18. Add the tomato paste.
- 19. Fry the tomato paste briefly.
- 20. Add the tomatoes.
- 21. Let the mixture simmer gently for about 10 minutes, stirring occasionally.
- 22. Simmer until the mixture has thickened.
- 23. Stir in the pine nuts and herbs.
- 24. Season the filling with salt.
- 25. Let the filling cool down.
- 26. Preheat the oven to 180°C top and bottom heat.
- 27. Knead the dough vigorously again on a floured work surface.
- 28. Divide the dough into four pieces.
- 29. Roll out the dough pieces into small pizzas.
- 30. Place the pizzas on a baking sheet lined with baking paper.
- 31. Brush the pizzas with some oil.
- 32. Distribute the minced meat mixture on the pizzas.
- 33. Leave a border of about 1 cm free.
- 34. Bake the pizzas in the preheated oven for about 25 minutes until crispy.
- 35. Add a dollop of yogurt to each pizza before serving.
- 36. Add some mango chutney to each pizza before serving.
- 37. Garnish the pizzas with mint leaves.
