Ingredients
- 200 g spelt flour Type 1050
- 50 g 5-grain flakes
- 0.5 packet baking powder
- 1 tsp salt
- 250 ml buttermilk
- 2 eggs
- 50 g dried tomatoes
- 50 g medium Gouda (or spicy Gruyère)
- 140 g corn (drained weight; can)
- 100 g turkey ham
- 1 tbsp rapeseed oil
Instructions
- 1. Put flour, cereal flakes, baking powder, and salt into a large bowl.
- 2. Add buttermilk and eggs to the bowl.
- 3. Mix everything well with the dough hooks of your hand mixer until a smooth mixture forms.
- 4. Cut the tomatoes into thin strips.
- 5. Grate the cheese.
- 6. Drain the corn well in a small sieve.
- 7. Cut the turkey ham into small cubes.
- 8. Stir the tomato strips, grated cheese, drained corn, and ham cubes into the batter.
- 9. Place paper liners into the cups of a muffin tin.
- 10. Lightly grease the liners with oil.
- 11. Divide the batter evenly among the liners.
- 12. Preheat the oven to 200 °C (180 °C with fan or gas mark 3).
- 13. Bake the muffins for 30 to 35 minutes until golden brown.
