🍕 Vegetable Pizza with Zucchini and Bell Pepper

Ingredients
- Fat (for the baking sheets)
- 75 g freshly grated Parmesan
- 75 g freshly grated Gouda
- 1 cube fresh yeast
- 600 g flour
- 1 tsp salt
- 1 pinch sugar
- 3 tbsp olive oil
- flour (for the work surface)
- 4 medium-sized zucchini
- 2 yellow bell peppers
- 2 large red onions
- 100 g green, pitted olives (filled to your liking)
- 6 sprigs thyme
- 2 garlic cloves
- 400 g chopped tomatoes (can)
- 5 tbsp olive oil (for frying and drizzling)
- 1 tsp dried oregano
Instructions
- 1. Stir the yeast into 300 milliliters of lukewarm water.
- 2. Mix the flour with the salt and the sugar.
- 3. Put the flour mixture into a bowl.
- 4. Make a well in the center of the flour mixture.
- 5. Pour the yeast mixture and the oil into the well.
- 6. Work all ingredients into a smooth dough.
- 7. Knead the dough with a little more flour or water if necessary.
- 8. Knead the dough vigorously on a floured surface for about 10 minutes.
- 9. Let the dough rise, covered, in a warm place for about 1 hour.
- 10. Wash and trim the zucchinis.
- 11. Slice the zucchinis thinly or shred them.
- 12. Wash the bell peppers and halve them.
- 13. Remove the seeds from the bell peppers.
- 14. Cut the bell peppers into small cubes.
- 15. Peel the onions.
- 16. Cut the onions into thin wedges.
- 17. Drain the olives well.
- 18. Slice the olives.
- 19. Rinse the thyme.
- 20. Shake the thyme dry.
- 21. Strip the thyme leaves from the stems.
- 22. Peel the garlic.
- 23. Finely chop the garlic.
- 24. Heat 1 tablespoon of olive oil in a pot.
- 25. Sauté the garlic until translucent in the hot oil.
- 26. Add the tomatoes.
- 27. Season the sauce with salt and pepper.
- 28. Add oregano to the sauce.
- 29. Simmer the sauce for about 5 minutes over medium heat.
- 30. Remove the sauce from the heat.
- 31. Let the sauce cool down.
- 32. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 33. Knead the dough again thoroughly.
- 34. Divide the dough into 4 equal portions.
- 35. Roll out each portion to the size of the pizza trays.
- 36. Line the greased pizza trays with the dough.
- 37. Shape the edge of the dough slightly thicker.
- 38. Spread the tomato sauce on the dough.
- 39. Arrange the zucchini slices in a circle on the dough like roof tiles.
- 40. Sprinkle the pizza with the bell pepper cubes.
- 41. Sprinkle the pizza with the onion wedges.
- 42. Distribute the cheese over the pizza.
- 43. Season the pizza with salt, pepper, and thyme.
- 44. Drizzle the pizza with a little olive oil.
- 45. Bake the pizza in the preheated oven for 20 to 25 minutes.
- 46. Distribute the olive slices on the pizzas 5 minutes before the end of the baking time.
- 47. Let the olives warm up on the pizza.
- 48. Take the pizza out of the oven.
- 49. Cut the pizza into pieces.
- 50. Serve the pizza warm.
