  4. 4. Make a well in the center of the flour mixture.
  5. 5. Pour the yeast mixture and the oil into the well.
  6. 6. Work all ingredients into a smooth dough.
  7. 7. Knead the dough with a little more flour or water if necessary.
  8. 8. Knead the dough vigorously on a floured surface for about 10 minutes.
  9. 9. Let the dough rise, covered, in a warm place for about 1 hour.
  10. 10. Wash and trim the zucchinis.
  11. 11. Slice the zucchinis thinly or shred them.
  12. 12. Wash the bell peppers and halve them.
  13. 13. Remove the seeds from the bell peppers.
  14. 14. Cut the bell peppers into small cubes.
  15. 15. Peel the onions.
  16. 16. Cut the onions into thin wedges.
  17. 17. Drain the olives well.
  18. 18. Slice the olives.
  19. 19. Rinse the thyme.
  20. 20. Shake the thyme dry.
  21. 21. Strip the thyme leaves from the stems.
