🍕 Venus Clam Pizza with Garlic and Fresh Basil

Ingredients
- 10 g fresh yeast
- 300 g flour
- 1 tsp salt
- 2 tbsp olive oil
- 1 kg Venus clams
- 1 shallot
- 2 garlic cloves
- 60 ml olive oil
- 1 splash dry white wine
- 1 tbsp freshly chopped parsley
- 1 tbsp lemon juice
- 1 tbsp freshly chopped basil
- salt
Instructions
- 1. Crumble the yeast into a small bowl.
- 2. Stir the yeast until smooth with three tablespoons of lukewarm water.
- 3. Mix the flour with the salt in a large bowl.
- 4. Make a well in the center of the flour mixture.
- 5. Pour the yeast mixture into the well.
- 6. Lightly dust the surface with a little flour.
- 7. Let the dough rise in a warm place for 15 minutes.
- 8. Add about 100 milliliters of lukewarm water to the dough.
- 9. Knead the dough until it is smooth and elastic.
- 10. Shape the dough into a ball.
- 11. Cover the dough ball with a cloth.
- 12. Let the dough rise in a warm place for about one hour.
- 13. Preheat the oven with a baking sheet to 240 degrees Celsius fan-forced.
- 14. Knead the dough vigorously again after the resting period.
- 15. Work the olive oil into the dough.
- 16. Add a little more flour if the dough is too sticky.
- 17. Divide the dough into four equal parts.
- 18. Lightly dust the work surface with flour.
- 19. Roll out the dough pieces into four oval pizzas.
- 20. Place the pizzas with some space between them on baking paper.
- 21. Let the pizzas rise again for 15 minutes.
- 22. Wash the venus clams thoroughly.
- 23. Remove hard parts and sand from the clams (clean them).
- 24. Peel the shallot and the garlic.
- 25. Cut the shallot into thin strips.
- 26. Slice the garlic into thin slices.
- 27. Heat one tablespoon of olive oil in a pan.
- 28. Sauté the shallot and garlic strips in it.
- 29. Deglaze the pan with the wine.
- 30. Add the clams to the pan.
- 31. Cover the pan.
- 32. Cook the clams for 3 to 4 minutes until they have opened.
- 33. Distribute the clams without the cooking liquid onto the pizzas.
- 34. Drizzle a little oil over the topped pizzas.
- 35. Bake the pizzas in the preheated oven on the hot trays for 8 to 10 minutes.
- 36. Whisk the remaining oil with the cooking liquid of the clams.
- 37. Add lemon juice and the basil to the oil mixture.
- 38. Season the sauce with salt.
- 39. Take the pizzas out of the oven.
- 40. Drizzle the pizzas with the prepared oil sauce.
- 41. Serve the pizzas immediately.
