  1. 1. Thaw the spinach leaves. If using fresh spinach, wash it thoroughly and let it drain well.
  2. 2. Sift the flour into a large bowl. Make a small well in the center. Crumble the yeast into this well. Add the sugar. Take some of the water and some flour and mix a small dough ball. Dust this dough with flour. Cover it. Let it rise in a warm place for 15 minutes.
  3. 3. Pour the olive oil to the edge of the bowl. Add the salt. Knead everything with a hand mixer until smooth. Add water gradually. The dough should be soft but not sticky.
  4. 4. Cover the dough. Let it rise for 30 to 40 minutes. The dough should double in size.
  5. 5. Fill a large pot with water. Bring the water to a boil. Add sugar, salt, and the squeezed lemon juice to the boiling water.
  6. 6. Cut off the woody lower ends of the asparagus. Peel the asparagus from the tip downwards. Add the asparagus to the boiling water. Cook for 5 to 10 minutes. The asparagus should be almost tender but still have a bite. Check this with a small piece. Drain the asparagus. Cut it into pieces about 3 cm long.
  7. 7. Peel the onion and the garlic clove. Dice them finely. Mix them with the spinach. Season the mixture generously with salt, pepper, and nutmeg.
  8. 8. Remove the stem and seeds of the bell pepper. Cut the pepper in half. Cut it into thin strips.
  9. 9. Preheat the oven to 210°C. Use top and bottom heat. Grease a pizza pan. Alternatively, line a baking sheet with baking paper.
  10. 10. Roll out the risen dough thinly. Match the shape to the pizza pan. Place the dough in the pan. Brush it lightly with olive oil. Season it with salt and pepper.
  11. 11. Distribute the prepared vegetables evenly over the dough. Season the vegetables lightly again.
  12. 12. Take the herb fresh cheese. Distribute it in small dollops evenly over the entire pizza.
  13. 13. Grate the Parmesan over the pizza. Bake the pizza for 10 to 15 minutes. It should be crispy and brown.
  14. 14. Cut the wild garlic into thin strips. Sprinkle it over the finished pizza only shortly before serving.
