  1. 1. Dissolve the yeast in 300 milliliters of lukewarm water.
  2. 2. Mix the flour with the salt and put the mixture into a bowl.
  3. 3. Make a well in the center of the flour mixture.
  4. 4. Pour the oil and the yeast milk into the well.
  5. 5. Process all ingredients with your hands or a dough hook to form a smooth dough.
  6. 6. Knead the dough vigorously on a floured work surface for about 10 minutes.
  7. 7. If the dough is too wet, work in a little more flour.
  8. 8. If the dough is too dry, add a little lukewarm water.
  9. 9. Put the dough back into the bowl.
  10. 10. Cover the bowl and let the dough rise in a warm, draft-free place for about 1 hour.
  11. 11. Season the puréed tomatoes with salt and pepper.
  12. 12. Wash the fresh tomatoes.
  13. 13. Remove the stem area from the fresh tomatoes.
  14. 14. Slice the fresh tomatoes into thin slices.
  15. 15. Let the olives and anchovies drain well.
  16. 16. Cut the olives into coarse slices.
  17. 17. Remove the rind from the Gorgonzola.
  18. 18. Cut the Gorgonzola into thin, narrow strips.
  19. 19. Let the mozzarella drain well.
  20. 20. Slice the mozzarella.
  21. 21. Wash the basil.
  22. 22. Shake the basil dry.
  23. 23. Pluck the basil leaves from the stems.
  24. 24. Preheat the oven to 200 degrees Celsius top and bottom heat.
  25. 25. Grease 4 pizza trays.
  26. 26. Knead the dough again well.
  27. 27. Divide the dough into 4 equal portions.
  28. 28. Roll each dough portion on a floured work surface to the size of a tray.
  29. 29. Line a prepared tray with the dough.
  30. 30. Shape the edge of the dough slightly thicker.
  31. 31. Spread the tomato sauce over the dough base.
  32. 32. Top the pizza with the tomato slices.
  33. 33. Top the pizza with the salami.
  34. 34. Top the pizza with the Gorgonzola.
  35. 35. Top the pizza with the mozzarella.
  36. 36. Sprinkle the anchovies, olives and capers over it.
  37. 37. Sprinkle the pizza with oregano.
  38. 38. Drizzle the pizza with a little olive oil.
  39. 39. Bake the pizza in the preheated oven for 20 to 25 minutes.
  40. 40. Take the finished pizzas out of the oven.
  41. 41. Loosen the pizzas from the trays.
  42. 42. Decorate the pizzas with the basil leaves.
