🍕 Pizza with Salami, Gorgonzola, Anchovies and Olives

Ingredients
- 1 cube fresh yeast (42 g)
- 600 g flour
- 1 tsp salt
- 60 ml olive oil
- flour (for the work surface)
- 500 g crushed tomatoes
- pepper (from the mill)
- 6 tomatoes
- 3 tbsp black, pitted olives (jar)
- 3 tbsp green, pitted olives (jar)
- 16 anchovy fillets (preserved in oil)
- 200 g Gorgonzola (in a block)
- 2 balls mozzarella (125 g each)
- 4 sprigs basil
- fat (for the baking sheets)
- 350 g salami (sliced)
- 2 tbsp capers (in a jar)
- 2 tbsp dried oregano
- olive oil (for drizzling)
Instructions
- 1. Dissolve the yeast in 300 milliliters of lukewarm water.
- 2. Mix the flour with the salt and put the mixture into a bowl.
- 3. Make a well in the center of the flour mixture.
- 4. Pour the oil and the yeast milk into the well.
- 5. Process all ingredients with your hands or a dough hook to form a smooth dough.
- 6. Knead the dough vigorously on a floured work surface for about 10 minutes.
- 7. If the dough is too wet, work in a little more flour.
- 8. If the dough is too dry, add a little lukewarm water.
- 9. Put the dough back into the bowl.
- 10. Cover the bowl and let the dough rise in a warm, draft-free place for about 1 hour.
- 11. Season the puréed tomatoes with salt and pepper.
- 12. Wash the fresh tomatoes.
- 13. Remove the stem area from the fresh tomatoes.
- 14. Slice the fresh tomatoes into thin slices.
- 15. Let the olives and anchovies drain well.
- 16. Cut the olives into coarse slices.
- 17. Remove the rind from the Gorgonzola.
- 18. Cut the Gorgonzola into thin, narrow strips.
- 19. Let the mozzarella drain well.
- 20. Slice the mozzarella.
- 21. Wash the basil.
- 22. Shake the basil dry.
- 23. Pluck the basil leaves from the stems.
- 24. Preheat the oven to 200 degrees Celsius top and bottom heat.
- 25. Grease 4 pizza trays.
- 26. Knead the dough again well.
- 27. Divide the dough into 4 equal portions.
- 28. Roll each dough portion on a floured work surface to the size of a tray.
- 29. Line a prepared tray with the dough.
- 30. Shape the edge of the dough slightly thicker.
- 31. Spread the tomato sauce over the dough base.
- 32. Top the pizza with the tomato slices.
- 33. Top the pizza with the salami.
- 34. Top the pizza with the Gorgonzola.
- 35. Top the pizza with the mozzarella.
- 36. Sprinkle the anchovies, olives and capers over it.
- 37. Sprinkle the pizza with oregano.
- 38. Drizzle the pizza with a little olive oil.
- 39. Bake the pizza in the preheated oven for 20 to 25 minutes.
- 40. Take the finished pizzas out of the oven.
- 41. Loosen the pizzas from the trays.
- 42. Decorate the pizzas with the basil leaves.
