  3. 3. Press a well into the center of the flour mound.
  4. 4. Cut the cold butter into small cubes.
  5. 5. Distribute the butter pieces around the well in the flour.
  6. 6. Place the eggs in the center of the well.
  7. 7. Add about 3 to 4 tablespoons of lukewarm water.
  8. 8. Chop all ingredients roughly with a knife until small crumbs form.
  9. 9. Knead the crumbs quickly by hand into a smooth dough.
  10. 10. Shape the dough into a ball.
  11. 11. Wrap the dough ball in cling film.
  12. 12. Let the dough rest in a cool place for about 30 minutes.
  13. 13. Preheat the oven to 180 degrees Celsius fan setting.
  14. 14. Roll out the dough on a floured surface.
  15. 15. Line a baking tray (approx. 30x40 cm) with baking paper.
  16. 16. Place the dough on the prepared tray.
  17. 17. Slice the Roquefort cheese.
  18. 18. Cover the dough base completely with the Roquefort slices.
  19. 19. Fry the bacon in a pan without extra fat until crispy.
  20. 20. Let the fried bacon drain on kitchen paper.
  21. 21. Clean the leek and wash it thoroughly.

  24. 24. Blanch the leek pieces briefly in salted water (cook briefly in boiling water).
