🍕 Crispy Leek and Bacon Pizza with Roquefort

Ingredients
- 400 g flour
- 1 tsp salt
- 200 g cold butter
- 2 eggs
- 200 g Roquefort
- 150 g diced bacon
- 4 stalks leek
- 100 g freshly grated Alpine cheese
- 4 eggs
- 400 ml whipping cream
- 4 tbsp crème fraîche
- salt
- pepper (from the mill)
- nutmeg (freshly grated)
Instructions
- 1. Mound the flour on a clean work surface.
- 2. Mix the flour with the salt.
- 3. Press a well into the center of the flour mound.
- 4. Cut the cold butter into small cubes.
- 5. Distribute the butter pieces around the well in the flour.
- 6. Place the eggs in the center of the well.
- 7. Add about 3 to 4 tablespoons of lukewarm water.
- 8. Chop all ingredients roughly with a knife until small crumbs form.
- 9. Knead the crumbs quickly by hand into a smooth dough.
- 10. Shape the dough into a ball.
- 11. Wrap the dough ball in cling film.
- 12. Let the dough rest in a cool place for about 30 minutes.
- 13. Preheat the oven to 180 degrees Celsius fan setting.
- 14. Roll out the dough on a floured surface.
- 15. Line a baking tray (approx. 30x40 cm) with baking paper.
- 16. Place the dough on the prepared tray.
- 17. Slice the Roquefort cheese.
- 18. Cover the dough base completely with the Roquefort slices.
- 19. Fry the bacon in a pan without extra fat until crispy.
- 20. Let the fried bacon drain on kitchen paper.
- 21. Clean the leek and wash it thoroughly.
- 22. Halve the leek lengthwise.
- 23. Cut the leek into pieces about 1 cm wide.
- 24. Blanch the leek pieces briefly in salted water (cook briefly in boiling water).
- 25. Shock the leek with cold water.
- 26. Let the leek drain well.
- 27. Distribute the leek evenly over the Roquefort cheese.
- 28. Cut the drained bacon into small cubes.
- 29. Sprinkle the bacon cubes over the leek.
- 30. Mix the Alpine cheese with the eggs, cream, and Crème fraîche.
- 31. Season the cheese mixture with salt, pepper, and nutmeg.
- 32. Pour the cheese-egg-cream mixture over the toppings.
- 33. Bake the pizza in the preheated oven for about 45 minutes until golden brown.
- 34. Cut the pizza into pieces and serve it lukewarm or cold.
