  1. 1. Crumble the yeast into a large bowl.
  2. 2. Mix the yeast with the sugar and about 175 milliliters of lukewarm water until the yeast has dissolved.
  3. 3. Add the flour, the olive oil, and one teaspoon of salt to the yeast mixture.
  4. 4. Knead the ingredients into a soft dough.
  5. 5. Cover the bowl.
  6. 6. Let the dough rise in a warm place for about one hour.
  7. 7. Preheat the oven to 240 degrees Celsius with fan.
  8. 8. Place one or more baking sheets in the oven so that they heat up with it.
  9. 9. Clean the mushrooms.
  10. 10. Slice the mushrooms.
  11. 11. Peel the garlic.
  12. 12. Chop the garlic finely.
  13. 13. Mix the garlic with the parsley and the oil.
  14. 14. Stir the crème fraîche until smooth.
  15. 15. Mix the crème fraîche with the egg yolk and the parmesan.
  16. 16. Form four balls from the dough.
  17. 17. Dust some flour on the work surface.
  18. 18. Roll the dough balls into round flatbreads.
  19. 19. Place the flatbreads on baking paper.
  20. 20. Spread the flatbreads with the cream.
  21. 21. Leave a narrow border around the dough free.
  22. 22. Top the pizzas with the mushrooms.
  23. 23. Brush the pizzas with the oil.
  24. 24. Carefully lift the baking sheets out of the oven.
  25. 25. Place the pizzas on the hot sheets with the paper.
  26. 26. Put the sheets back into the oven.
  27. 27. Bake the pizzas for 10 to 15 minutes until golden brown.
  28. 28. Season the finished pizzas with salt and pepper.
  29. 29. Serve the pizzas immediately.
