🍕 Crispy Mushroom Pizza

Ingredients
- 0.5 cube yeast (21 g)
- 1 pinch sugar
- 400 g flour
- 3 tbsp olive oil
- salt
- 350 g porcini mushrooms
- 2 garlic cloves
- 2 tbsp fresh chopped parsley
- 4 tbsp olive oil
- 150 g crème fraîche
- 1 egg yolk
- 2 tbsp grated parmesan
- pepper
- flour (for working)
Instructions
- 1. Crumble the yeast into a large bowl.
- 2. Mix the yeast with the sugar and about 175 milliliters of lukewarm water until the yeast has dissolved.
- 3. Add the flour, the olive oil, and one teaspoon of salt to the yeast mixture.
- 4. Knead the ingredients into a soft dough.
- 5. Cover the bowl.
- 6. Let the dough rise in a warm place for about one hour.
- 7. Preheat the oven to 240 degrees Celsius with fan.
- 8. Place one or more baking sheets in the oven so that they heat up with it.
- 9. Clean the mushrooms.
- 10. Slice the mushrooms.
- 11. Peel the garlic.
- 12. Chop the garlic finely.
- 13. Mix the garlic with the parsley and the oil.
- 14. Stir the crème fraîche until smooth.
- 15. Mix the crème fraîche with the egg yolk and the parmesan.
- 16. Form four balls from the dough.
- 17. Dust some flour on the work surface.
- 18. Roll the dough balls into round flatbreads.
- 19. Place the flatbreads on baking paper.
- 20. Spread the flatbreads with the cream.
- 21. Leave a narrow border around the dough free.
- 22. Top the pizzas with the mushrooms.
- 23. Brush the pizzas with the oil.
- 24. Carefully lift the baking sheets out of the oven.
- 25. Place the pizzas on the hot sheets with the paper.
- 26. Put the sheets back into the oven.
- 27. Bake the pizzas for 10 to 15 minutes until golden brown.
- 28. Season the finished pizzas with salt and pepper.
- 29. Serve the pizzas immediately.
