  1. 1. Crumble the yeast into 50 milliliters of lukewarm water and stir until dissolved.
  2. 2. Mix the flour with the salt and place the mixture in a bowl.
  3. 3. Make a well in the center of the flour mixture and pour in the yeast-water mixture.
  4. 4. Lightly dust the surface with flour and let the bowl rest for 15 minutes to allow the dough to rise.
  5. 5. Now add just under 150 milliliters of lukewarm water and knead everything into a smooth dough.
  6. 6. Shape the dough into a ball, cover it with a cloth, and let it rise in a warm place for 1 hour.
  7. 7. Preheat the oven to 250 degrees Celsius for top and bottom heat.
  8. 8. Take the dough out after the resting time and knead it vigorously once more.
  9. 9. Lightly dust a work surface with flour and roll out the dough there.
  10. 10. Place the dough sheet on a greased baking tray.
  11. 11. Drain the mozzarella and tear it into small pieces with your hands.
  12. 12. Also drain the ricotta well.
  13. 13. Grate the Parmesan finely using a grater.
  14. 14. Sprinkle the drained mozzarella and the grated Parmesan evenly over the dough.
  15. 15. Distribute the ricotta in small mounds on top of the cheese.
  16. 16. Drizzle the pizza with a little olive oil.
  17. 17. Put the pizza in the preheated oven and bake it golden brown for 20 to 30 minutes.
  18. 18. Take the finished pizza out of the oven.
  19. 19. Sprinkle Fleur de Sel (fine sea salt) over it.
  20. 20. Grind fresh pepper over the pizza and serve immediately.
