🍕 Crispy Pizza with Fresh Mozzarella and Ricotta

Ingredients
- 10 g fresh yeast
- 400 g flour
- 1 tsp salt
- 200 g mozzarella
- 150 g ricotta
- 100 g parmesan
- cold-pressed olive oil (for drizzling)
- Fleur de sel
- black pepper (from the mill)
Instructions
- 1. Crumble the yeast into 50 milliliters of lukewarm water and stir until dissolved.
- 2. Mix the flour with the salt and place the mixture in a bowl.
- 3. Make a well in the center of the flour mixture and pour in the yeast-water mixture.
- 4. Lightly dust the surface with flour and let the bowl rest for 15 minutes to allow the dough to rise.
- 5. Now add just under 150 milliliters of lukewarm water and knead everything into a smooth dough.
- 6. Shape the dough into a ball, cover it with a cloth, and let it rise in a warm place for 1 hour.
- 7. Preheat the oven to 250 degrees Celsius for top and bottom heat.
- 8. Take the dough out after the resting time and knead it vigorously once more.
- 9. Lightly dust a work surface with flour and roll out the dough there.
- 10. Place the dough sheet on a greased baking tray.
- 11. Drain the mozzarella and tear it into small pieces with your hands.
- 12. Also drain the ricotta well.
- 13. Grate the Parmesan finely using a grater.
- 14. Sprinkle the drained mozzarella and the grated Parmesan evenly over the dough.
- 15. Distribute the ricotta in small mounds on top of the cheese.
- 16. Drizzle the pizza with a little olive oil.
- 17. Put the pizza in the preheated oven and bake it golden brown for 20 to 30 minutes.
- 18. Take the finished pizza out of the oven.
- 19. Sprinkle Fleur de Sel (fine sea salt) over it.
- 20. Grind fresh pepper over the pizza and serve immediately.
