🍕 Turkish-style Minced Meat Pizza with Quark Dough

Ingredients
- 150 g Quark
- 3 tbsp whipping cream
- 6 tbsp oil
- salt
- 300 g flour
- 2 tsp baking powder
- 3 tomatoes
- 3 tbsp tomato paste
- 1 bunch thyme (leaves)
- 400 g lamb mince
- 2 tbsp oil
- black cumin
- salt
- pepper (from the mill)
Instructions
- 1. Whisk the quark, cream, oil, and one teaspoon of salt together in a bowl.
- 2. Add the flour and baking powder, then knead everything into a smooth dough.
- 3. Cover the dough and place it in the refrigerator for about 30 minutes.
- 4. Briefly knead the dough on a floured work surface.
- 5. Divide the dough into two parts and roll them out into pizza bases.
- 6. Press the edges of the pizza bases slightly upwards to form a crust.
- 7. Place the pizza bases on a baking tray greased with oil.
- 8. Preheat the oven to 200 degrees Celsius.
- 9. Wash the tomatoes thoroughly.
- 10. Cut out the stem area from the tomatoes.
- 11. Cut the tomatoes into wedges.
- 12. Fry the minced meat in hot oil until crumbly.
- 13. Stir in the tomato paste and thyme into the meat.
- 14. Season the meat mixture with salt, pepper, and black cumin.
- 15. Spread the meat mixture evenly over the dough.
- 16. Leave a border of about one to two centimeters free around the edge.
- 17. Top the pizza with the prepared tomato wedges.
- 18. Bake the pizza in the preheated oven for about 25 minutes.
