🍕 Pizza with Grilled Vegetables

Ingredients
- 0.5 cube yeast (21 g)
- 1 pinch sugar
- 450 g flour
- 4 tbsp olive oil
- oil (for the pizza baking sheets)
- 1 tsp salt
- 1 smaller eggplant
- 1 zucchini
- 1 yellow bell pepper
- 1 red bell pepper
- 2 tbsp olive oil
- 400 g crushed tomatoes
- 1 tsp dried thyme
- 0.5 tsp dried marjoram
- salt
- pepper (from the mill)
- 1 pinch sugar
- 300 g mozzarella
- 70 g olives
- 1 chopped garlic clove
- 4 tbsp olive oil
Instructions
- 1. Preheat the oven to 200 degrees Celsius with fan.
- 2. Light the charcoal grill.
- 3. Crumble the yeast into a bowl.
- 4. Add the sugar and 200 milliliters of lukewarm water.
- 5. Stir the mixture until smooth.
- 6. Add the flour, 4 tablespoons of olive oil, and the salt.
- 7. Knead everything into a smooth dough.
- 8. Cover the dough.
- 9. Let the dough rise in a warm place for about 1 hour.
- 10. Wash the eggplant and the zucchini.
- 11. Remove the tough ends from the vegetables.
- 12. Slice the eggplant and the zucchini into rounds.
- 13. Wash the bell peppers.
- 14. Halve the bell peppers.
- 15. Remove the seeds and the core.
- 16. Cut the bell peppers into pieces.
- 17. Toss all the vegetables with the olive oil.
- 18. Place the vegetables on the hot grill.
- 19. Turn the vegetables once.
- 20. Grill the vegetables for 4 to 5 minutes.
- 21. Shape 4 balls from the dough.
- 22. Sprinkle some flour on the work surface.
- 23. Roll out the dough balls into round flatbreads with a diameter of about 26 centimeters.
- 24. Grease 4 baking sheets.
- 25. Place the dough flatbreads on the greased baking sheets.
- 26. Mix the tomato puree with 1/2 teaspoon of thyme and marjoram.
- 27. Lightly salt the tomato sauce.
- 28. Pepper the tomato sauce.
- 29. Season the sauce with sugar.
- 30. Spread the tomato mixture onto the dough bases.
- 31. Slice the mozzarella into thin slices.
- 32. Distribute the mozzarella slices over the tomato sauce.
- 33. Distribute the grilled vegetables on the pizza.
- 34. Distribute the olives on the pizza.
- 35. Sprinkle the pizza with the remaining thyme.
- 36. Sprinkle the pizza with the garlic.
- 37. Drizzle the pizza with oil.
- 38. Salt the pizza.
- 39. Pepper the pizza.
- 40. Place the pizza in the preheated oven.
- 41. Bake the pizza for about 25 minutes until golden brown.
- 42. Serve the pizza.
