🍕 Spicy Chorizo Pizza with Artichokes, Olives, and Arugula

Ingredients
- 0.5 cube fresh yeast (21 g)
- 500 g flour
- 1 tsp salt
- 3 tbsp olive oil
- flour (for the work surface)
- 600 g artichoke hearts (jar, can)
- 80 g black, pitted olives
- 4 tbsp caper berries
- 200 g chorizo
- 200 g sour cream
- pepper (from the mill)
- olive oil (for drizzling)
- 4 tbsp freshly grated Parmesan
- 1 bunch arugula
- 6 tbsp freshly shaved Parmesan
Instructions
- 1. Dissolve the yeast in 250 milliliters of lukewarm water.
- 2. Mix the flour with the salt in a large bowl.
- 3. Make a well in the center of the flour mixture.
- 4. Pour the yeast water and the oil into the well.
- 5. Knead the ingredients by hand into a smooth dough.
- 6. If the dough is too sticky, add a little more flour.
- 7. If the dough is too dry, add a little more lukewarm water.
- 8. Knead the dough vigorously on a floured surface for about 10 minutes.
- 9. Place the dough back into the bowl.
- 10. Lightly dust the dough with flour.
- 11. Let the dough rest for 1 hour.
- 12. Preheat the oven to 220 degrees Celsius with top and bottom heat.
- 13. Let the artichoke hearts, olives, and capers drain well.
- 14. Peel the chorizo sausage.
- 15. Slice the chorizo into thin slices.
- 16. Slice the artichoke hearts into thin slices.
- 17. Stir the sour cream in a small bowl.
- 18. Season the sour cream with salt and pepper.
- 19. Knead the dough well again after the resting period.
- 20. Divide the dough into 4 equal portions.
- 21. Roll each portion to the size of a pizza tray.
- 22. Place the rolled-out doughs on the oiled pizza trays.
- 23. Spread the sour cream evenly over the dough.
- 24. Top the pizza with the chorizo slices.
- 25. Distribute the artichoke hearts over the pizza.
- 26. Sprinkle the olives over the pizza.
- 27. Add the capers to the pizza.
- 28. Lightly salt and pepper the toppings.
- 29. Sprinkle the pizza with freshly grated Parmesan cheese.
- 30. Drizzle the pizza with a little olive oil.
- 31. Bake the pizzas in the preheated oven for 15 to 20 minutes.
- 32. Wash the arugula under running water.
- 33. Remove any wilted or damaged leaves from the arugula.
- 34. Clean the arugula by removing tough stems.
- 35. Spin the arugula dry.
- 36. Take the pizzas out of the oven.
- 37. Top the hot pizzas with the arugula.
- 38. Sprinkle the pizzas with Parmesan shavings.
- 39. Serve the pizzas immediately.
