  1. 1. Put the flour into a large bowl and sift it to make it airy.
  2. 2. Press a small indentation into the center of the flour with your finger.
  3. 3. Dissolve the yeast and the sugar in 250 milliliters of lukewarm water.
  4. 4. Pour the yeast mixture into the indentation in the flour.
  5. 5. Cover the bowl and let the dough rest for 30 minutes.
  6. 6. Add 1 teaspoon of salt to the dough.
  7. 7. Knead the dough vigorously for 10 minutes until it is elastic and shiny.
  8. 8. Shape the dough into a ball.
  9. 9. Lightly dust the dough ball with flour.
  10. 10. Cover the ball and let it rise for 90 minutes.
  11. 11. Line 2 baking sheets with baking paper.
  12. 12. Divide the dough into 4 or 2 parts, depending on how many pizzas you want to bake.
  13. 13. Shape the parts into 4 round pizzas with a diameter of about 28 centimeters.
  14. 14. Alternatively, you can roll out the dough halves on the sheets and leave the edge slightly thicker.
  15. 15. Mix chunky tomatoes with tomato paste and oregano.
  16. 16. Season the tomato mixture with salt and pepper.
  17. 17. Spread the tomato mixture on the dough, but leave the edge free.
  18. 18. Drain the mozzarella.
  19. 19. Slice the mozzarella into thin slices.
  20. 20. Place the mozzarella slices on the pizza.
  21. 21. Halve the artichokes.
  22. 22. Distribute the artichoke halves on the pizza.
  23. 23. Place one chili pepper on the pizza.
  24. 24. Sprinkle the pizza with Parmesan.
  25. 25. Drizzle the pizza with oil.
  26. 26. Preheat the oven to 225 degrees Celsius (convection 200 degrees Celsius, gas level 3–4).
  27. 27. Bake the pizza for 15 to 20 minutes until the cheese melts and turns lightly brown.
  28. 28. Top the finished pizza with sage leaves for serving.
