🍕 Fluffy Pizza with Artichokes and Mozzarella

Ingredients
- 500 g spelt flour Type 1050 (+ 1 tbsp for working)
- 30 g fresh yeast
- 0.5 tsp sugar
- salt
- 400 g chunky tomatoes (can)
- 2 tbsp tomato paste
- 1 tsp oregano
- pepper
- 250 g mozzarella
- 50 g parmesan (freshly grated)
- 200 g small artichoke hearts (can)
- 4 red chili peppers
- 6 tbsp olive oil
- 4 sprigs sage
Instructions
- 1. Put the flour into a large bowl and sift it to make it airy.
- 2. Press a small indentation into the center of the flour with your finger.
- 3. Dissolve the yeast and the sugar in 250 milliliters of lukewarm water.
- 4. Pour the yeast mixture into the indentation in the flour.
- 5. Cover the bowl and let the dough rest for 30 minutes.
- 6. Add 1 teaspoon of salt to the dough.
- 7. Knead the dough vigorously for 10 minutes until it is elastic and shiny.
- 8. Shape the dough into a ball.
- 9. Lightly dust the dough ball with flour.
- 10. Cover the ball and let it rise for 90 minutes.
- 11. Line 2 baking sheets with baking paper.
- 12. Divide the dough into 4 or 2 parts, depending on how many pizzas you want to bake.
- 13. Shape the parts into 4 round pizzas with a diameter of about 28 centimeters.
- 14. Alternatively, you can roll out the dough halves on the sheets and leave the edge slightly thicker.
- 15. Mix chunky tomatoes with tomato paste and oregano.
- 16. Season the tomato mixture with salt and pepper.
- 17. Spread the tomato mixture on the dough, but leave the edge free.
- 18. Drain the mozzarella.
- 19. Slice the mozzarella into thin slices.
- 20. Place the mozzarella slices on the pizza.
- 21. Halve the artichokes.
- 22. Distribute the artichoke halves on the pizza.
- 23. Place one chili pepper on the pizza.
- 24. Sprinkle the pizza with Parmesan.
- 25. Drizzle the pizza with oil.
- 26. Preheat the oven to 225 degrees Celsius (convection 200 degrees Celsius, gas level 3–4).
- 27. Bake the pizza for 15 to 20 minutes until the cheese melts and turns lightly brown.
- 28. Top the finished pizza with sage leaves for serving.
