🍕 Indian-style chicken pizza

Ingredients
- 200 g rye flour (Type 1150)
- 200 g wheat flour (Type 550)
- salt
- 0.5 cube yeast
- 200 g large chicken breast fillet (1 large chicken breast fillet)
- 1 tsp olive oil
- pepper
- 120 g spinach
- 1 onion
- 200 g cream cheese (13 % fat)
- 4 tbsp (100 g) mango chutney
- 1 tsp curry powder (Madras curry)
- 350 g mango (1 mango)
Instructions
- 1. Mix both types of flour with half a teaspoon of salt in a large bowl.
- 2. Make a well in the center of the flour mixture.
- 3. Crumble the yeast into the well.
- 4. Pour 250 milliliters of lukewarm water over the ingredients.
- 5. Knead the dough until smooth using the dough hooks of a hand mixer.
- 6. Cover the bowl and let the dough rise in a warm place for about 30 minutes.
- 7. Wait until the dough volume has doubled.
- 8. Rinse the chicken breast fillet under running water.
- 9. Pat the fillet dry with kitchen paper.
- 10. Heat some oil in a small non-stick pan.
- 11. Season the chicken fillet with salt and pepper.
- 12. Fry the fillet for about 5 minutes on each side in the pan.
- 13. Pick through the spinach leaves and remove any tough stems.
- 14. Wash the spinach thoroughly.
- 15. Let the spinach drain well.
- 16. Cut the drained spinach into strips.
- 17. Peel the onion.
- 18. Dice the onion into small cubes.
- 19. Remove the fried chicken fillet from the pan.
- 20. Add the spinach and onion cubes to the pan.
- 21. Sauté the vegetables briefly in the remaining fat.
- 22. Put cream cheese and mango chutney into a small bowl.
- 23. Mix the two ingredients well together.
- 24. Season the cream with curry powder, salt, and pepper.
- 25. Dust a work surface with some flour.
- 26. Divide the pizza dough into four equal portions.
- 27. Roll each portion into a circle about 23 centimeters in diameter.
- 28. Place two pizza bases on a sheet of baking paper.
- 29. Ensure the baking paper sheet is large enough for the baking tray.
- 30. Pull the baking paper sheet with the pizza bases onto the baking tray.
- 31. Spread some of the cream cheese mixture onto the pizza bases.
- 32. Top the pizzas with the sautéed spinach.
- 33. Add diced mango.
- 34. Slice the chicken fillet into thin slices.
- 35. Distribute the chicken slices over the pizzas.
- 36. Preheat the oven to 225 degrees Celsius.
- 37. Use 200 degrees Celsius for fan-assisted ovens or Gas Mark 3 to 4.
- 38. Slide the baking tray onto the lowest rack.
- 39. Bake the pizzas for about 15 to 20 minutes.
- 40. Remove the finished pizzas from the oven.
- 41. Pull the baking paper with the pizzas off the tray.
- 42. Place the baking paper with the remaining pizza bases back onto the tray.
- 43. Top the remaining pizzas with the leftover ingredients.
- 44. Bake the second batch for another 15 to 20 minutes.
