🍕 Crispy Pizza Squares with Tomato, Cheese, and Olives

Ingredients
- 400 g puff pastry (frozen)
- 1 egg yolk
- 6 tomatoes
- 1 clove of garlic
- salt
- 4 tbsp olive oil
- 400 g mozzarella
- 80 g black olives (pitted to taste)
- 6 sprigs thyme
- pepper (from the mill)
- basil (for garnish)
Instructions
- 1. Let the puff pastry thaw at room temperature.
- 2. Preheat the oven to 220 degrees Celsius fan setting.
- 3. Wash the tomatoes thoroughly.
- 4. Remove the hard stem base from the tomatoes.
- 5. Slice the tomatoes into thin rounds.
- 6. Peel the garlic clove.
- 7. Mince the garlic very finely.
- 8. Place the minced garlic into a small bowl.
- 9. Add a pinch of salt to the garlic.
- 10. Use the flat side of a knife to mash the garlic and salt into a fine paste.
- 11. Add 2 to 3 tablespoons of olive oil to the garlic paste.
- 12. Stir the mixture well until it is homogeneous.
- 13. Slice the mozzarella cheese.
- 14. Roll out the thawed puff pastry flat.
- 15. Cut the pastry into 8 to 10 squares of roughly equal size.
- 16. The squares should be approximately 10 by 10 centimeters in size.
- 17. Line a baking tray with baking paper.
- 18. Place the pastry squares onto the prepared baking tray.
- 19. Whisk the egg yolk in a small bowl.
- 20. Brush the edges of the pastry squares with the whisked egg yolk.
- 21. Spread the garlic-olive oil mixture over the center of the pastry squares.
- 22. Distribute the tomato slices evenly over the pastry.
- 23. Place the olives on the pizza squares.
- 24. Distribute the mozzarella slices over the pastry.
- 25. Sprinkle fresh thyme leaves over the topped pastry pieces.
- 26. Season the pizza squares with a little salt.
- 27. Season the pizza squares with freshly ground pepper.
- 28. Drizzle the remaining olive oil over the topped pastry pieces.
- 29. Place the baking tray into the preheated oven.
- 30. Bake the pizza squares for 25 to 30 minutes.
- 31. Remove the pizza squares from the oven.
- 32. Garnish the finished pieces with fresh basil leaves.
- 33. Serve the pizza squares immediately.
