🍕 Pizza Caprese

Ingredients
- 500 g Wiener Griessler flour (double-milled flour)
- 1 cube yeast (40 g)
- 1 tsp salt
- 1 pinch sugar
- 250 ml lukewarm water
- 8 tbsp chunky tomatoes (can)
- 125 g buffalo mozzarella
- 1 handful fresh basil
- pepper (freshly grated)
- salt
- olive oil (cold-pressed)
Instructions
- 1. Preheat the oven to 250 degrees Celsius with fan setting.
- 2. Pour the flour onto a clean work surface and press a well into the center with your hand.
- 3. Crumble the yeast into this well and sprinkle it with the sugar.
- 4. Add a small splash of the lukewarm water and let the mixture rest for ten minutes.
- 5. Add the salt and the rest of the lukewarm water.
- 6. Knead everything into a smooth dough.
- 7. If the dough is too sticky, add a little more flour.
- 8. If the dough seems too dry, carefully add more tablespoons of water.
- 9. Cover the dough and let it rise in a warm place without drafts for one to two hours.
- 10. Sprinkle some flour on the work surface.
- 11. Divide the dough into two equal halves.
- 12. Roll out each half with a rolling pin into a round flatbread.
- 13. Let the mozzarella drain.
- 14. Slice the mozzarella.
- 15. Place the dough rounds on two lightly greased pizza trays.
- 16. Spread four tablespoons of tomato sauce or puree on each round.
- 17. Season the sauce with salt and pepper.
- 18. Drizzle each round with two tablespoons of olive oil.
- 19. Distribute the mozzarella slices evenly on top.
- 20. Place the basil leaves on top.
- 21. Slide both trays into the preheated oven.
- 22. Bake the pizzas for twenty to twenty-five minutes until done.
