  1. 1. Dissolve the yeast in 100 milliliters of lukewarm water.
  2. 2. Stir 100 grams of flour into the yeast mixture.
  3. 3. Cover the bowl with a clean kitchen towel.
  4. 4. Let the mixture rise for 15 minutes.
  5. 5. Knead the pre-dough with the remaining flour, the rest of the water, the olive oil, and the salt until smooth.
  6. 6. Use the dough hooks of your hand mixer for this.
  7. 7. Lightly dust the dough with flour.
  8. 8. Cover the dough again.
  9. 9. Let the dough rise until its volume has doubled.
  10. 10. Let the spinach thaw.
  11. 11. Squeeze the spinach well to remove excess liquid.
  12. 12. Wash the mint.
  13. 13. Spin the mint dry.
  14. 14. Pluck the mint leaves.
  15. 15. Chop the mint leaves finely with a knife along with the spinach.
  16. 16. Peel the garlic.
  17. 17. Press the garlic through or chop it finely.
  18. 18. Mix all ingredients for the filling.
  19. 19. Season the mixture with salt and pepper to taste.
  20. 20. Punch down the yeast dough.
  21. 21. Divide the dough into 4 equal portions on a lightly floured work surface.
  22. 22. Roll each portion into a rectangle approximately 20 by 40 centimeters.
  23. 23. Spread one quarter of the filling on each rectangle.
  24. 24. Roll the rectangles up tightly.
  25. 25. Place the rolls side by side in a greased, ovenproof dish.
  26. 26. Ensure the seam faces downwards.
  27. 27. Whisk the cream and eggs together in a bowl.
  28. 28. Crumble the feta cheese over them.
  29. 29. Mix the feta cheese into the liquid.
  30. 30. Pour the sauce evenly over the yeast dough rolls.
  31. 31. Let the dish rest for another 15 minutes.
  32. 32. Place the dish on the middle rack in an oven preheated to 190 degrees Celsius.
  33. 33. Bake the pitta rolls for 40 minutes until golden yellow.
  34. 34. Serve them warm or cold afterwards.
