🍽️ Yeast Dough Rolls with Spinach Filling and Feta Sauce

Ingredients
- 200 ml lukewarm water
- 30 g fresh yeast
- 500 g flour
- 2 tbsp olive oil
- 2 tsp salt
- 1 package frozen leaf spinach (drained weight 450 g)
- 3 sprigs mint
- 3 young garlic cloves
- 200 g cottage cheese
- 200 g mild feta cheese
- 30 g raisins
- 3 tbsp toasted pine nuts
- salt
- pepper
- 100 g whipping cream
- 2 eggs
- 200 g feta cheese
- 1 ovenproof dish (approx. 30 x 20 cm)
- butter (for the dish)
Instructions
- 1. Dissolve the yeast in 100 milliliters of lukewarm water.
- 2. Stir 100 grams of flour into the yeast mixture.
- 3. Cover the bowl with a clean kitchen towel.
- 4. Let the mixture rise for 15 minutes.
- 5. Knead the pre-dough with the remaining flour, the rest of the water, the olive oil, and the salt until smooth.
- 6. Use the dough hooks of your hand mixer for this.
- 7. Lightly dust the dough with flour.
- 8. Cover the dough again.
- 9. Let the dough rise until its volume has doubled.
- 10. Let the spinach thaw.
- 11. Squeeze the spinach well to remove excess liquid.
- 12. Wash the mint.
- 13. Spin the mint dry.
- 14. Pluck the mint leaves.
- 15. Chop the mint leaves finely with a knife along with the spinach.
- 16. Peel the garlic.
- 17. Press the garlic through or chop it finely.
- 18. Mix all ingredients for the filling.
- 19. Season the mixture with salt and pepper to taste.
- 20. Punch down the yeast dough.
- 21. Divide the dough into 4 equal portions on a lightly floured work surface.
- 22. Roll each portion into a rectangle approximately 20 by 40 centimeters.
- 23. Spread one quarter of the filling on each rectangle.
- 24. Roll the rectangles up tightly.
- 25. Place the rolls side by side in a greased, ovenproof dish.
- 26. Ensure the seam faces downwards.
- 27. Whisk the cream and eggs together in a bowl.
- 28. Crumble the feta cheese over them.
- 29. Mix the feta cheese into the liquid.
- 30. Pour the sauce evenly over the yeast dough rolls.
- 31. Let the dish rest for another 15 minutes.
- 32. Place the dish on the middle rack in an oven preheated to 190 degrees Celsius.
- 33. Bake the pitta rolls for 40 minutes until golden yellow.
- 34. Serve them warm or cold afterwards.
