🍽️ Chilled Raspberry Coconut Ice Cups

Ingredients
- 300 g raspberries
- 3 tbsp powdered sugar
- 2 tbsp lemon juice
- 400 ml coconut milk
Instructions
- 1. Thoroughly wash the raspberries under running water.
- 2. Take 200 grams of the raspberries and puree them until smooth.
- 3. Press the puree through a fine sieve to remove all seeds.
- 4. Stir the seed-free raspberry liquid well with powdered sugar and lemon juice.
- 5. Place the coconut milk in the refrigerator until it is very cold.
- 6. Also place the raspberry-sugar mixture in the refrigerator until it is very cold.
- 7. Just before serving, combine the cold coconut milk and the cold raspberry mixture in a bowl.
- 8. Beat the mixture briefly with a hand blender (immersion blender) until it becomes creamy.
- 9. Fill the glasses with ice cubes.
- 10. Pour the raspberry-coconut mixture over the ice cubes.
- 11. Decorate the cups with the remaining fresh raspberries.
