  1. 1. Whisk flour, sugar, vanilla sugar, salt, milk, and eggs in a bowl until you have a smooth batter.
  2. 2. Let the batter rest for 30 minutes to allow it to swell.
  3. 3. Toast the pine nuts in a dry pan until they are fragrant.
  4. 4. Remove a small handful of the toasted pine nuts and set them aside for garnish.
  5. 5. Finely chop the remaining pine nuts.
  6. 6. Stir the chopped pine nuts into the batter.
  7. 7. Cook thin crêpes in hot ghee.
  8. 8. Pick the mint leaves off the stems.
  9. 9. Finely chop large mint leaves if necessary.
  10. 10. Mix the mint leaves with the honey.
  11. 11. Slice the lime into thin rounds.
  12. 12. Add the lime slices to the honey-mint mixture.
  13. 13. Place a serving of ice cream on each plate.
  14. 14. Place the crêpes next to or on top of the ice cream.
  15. 15. Drizzle the honey-mint sauce over the crêpes.
  16. 16. Garnish the dish with the reserved pine nuts, fresh mint, and lime slices.
  17. 17. Serve the crêpes immediately.
