🍽️ Warm Mushroom and Zucchini Salad with Feta

Ingredients
- 600 g mixed fresh mushrooms (chanterelles, button mushrooms, porcini)
- 2 zucchini
- 3 red garlic cloves
- 1 shallot
- 3 spring onions
- 1 bunch chives
- 2 tbsp olive oil
- 2 tbsp white balsamic vinegar
- salt
- pepper (from the mill)
- 200 g cubed feta
Instructions
- 1. Clean the mushrooms and slice or chop them into small pieces.
- 2. Wash the zucchini, cut it in half, and slice it.
- 3. Peel the garlic clove and the onion and dice them finely.
- 4. Wash the spring onions and chives, shake them dry, and cut them into rings or small rolls.
- 5. Heat the oil in a frying pan.
- 6. Sauté the mushrooms for 3 to 4 minutes, shaking the pan occasionally.
- 7. Add the zucchini, onion, garlic, and spring onions to the pan and sauté briefly.
- 8. Remove the pan from the heat and let the mixture cool down briefly.
- 9. Mix the vinegar with the chives.
- 10. Season the vinegar and chive mixture with salt and pepper.
- 11. Mix the seasoned vinegar mixture and the cubed feta cheese with the warm vegetables.
- 12. Serve the salad lukewarm.
