🍽️ Creamy Wild Mushroom Sauce

Ingredients
- 1200 g fresh wild mushrooms (cleaned, if necessary chopped)
- 400 ml white wine
- 500 ml whipping cream
- 2 shallots (finely chopped)
- 2 garlic cloves
- thyme leaves (2 tsp each, finely chopped)
- rosemary needles (2 tsp each, finely chopped)
- 4 tbsp butter
- salt
- pepper (from the mill)
- 2 tsp cornstarch
Instructions
- 1. Heat butter in a pan.
- 2. Finely chop the shallots and herbs.
- 3. Press the garlic through a press.
- 4. Sauté the shallots, herbs, and garlic in the hot butter for a short time.
- 5. Add the wild mushrooms to the pan.
- 6. Fry the mushrooms for a few minutes, stirring constantly.
- 7. Deglaze the pan with wine.
- 8. Add the cream.
- 9. Bring the sauce to a boil.
- 10. Season the sauce with salt and pepper.
- 11. Starch the cornstarch in a small amount of water until smooth.
- 12. Add the starch-water mixture to the mushroom sauce.
- 13. Bring the sauce to a boil again, stirring constantly.
