🍽️ Creamy Mashed Potatoes with Mushroom and Leek Stew

Ingredients
- 800 g floury potatoes
- salt
- 2 stalks leek
- 250 g mushrooms
- 250 g oyster mushrooms
- 1 shallot
- 1 clove garlic
- 2 tbsp rapeseed oil
- 1 tsp spelt wholemeal flour
- 50 ml cloudy apple juice
- pepper
- 200 ml cooking cream
- 200 ml milk (3.5% fat)
- 1 tbsp butter (15 g)
- nutmeg
- 1 handful herbs (5 g; parsley, chives)
Instructions
- 1. Peel the potatoes.
- 2. Cut them into large chunks.
- 3. Place the potato chunks in a pot with salted water.
- 4. Cover the pot.
- 5. Cook the potatoes for about 25 minutes until tender.
- 6. Thoroughly wash the leek.
- 7. Slice the leek into rings.
- 8. Slice the button mushrooms.
- 9. Cut the oyster mushrooms into small pieces.
- 10. Peel the shallot.
- 11. Peel the garlic.
- 12. Finely chop the shallot and garlic.
- 13. Heat one tablespoon of oil in a pan.
- 14. Sauté the shallot and garlic for 3 minutes over medium heat.
- 15. Add the mushrooms.
- 16. Fry the mushrooms for about 5 minutes.
- 17. Sprinkle everything with flour.
- 18. Simmer the mixture for 1 minute.
- 19. Deglaze the pan with juice.
- 20. Season with salt and pepper.
- 21. Pour in the cooking cream.
- 22. Let the mixture simmer for 3 to 4 minutes over medium heat.
- 23. Heat the remaining oil in a second pan.
- 24. Sauté the leek for about 5 minutes over medium heat.
- 25. Drain the potatoes.
- 26. Let them steam dry for a moment.
- 27. Press the warm potatoes through a potato ricer into a pot.
- 28. Stir in milk and butter.
- 29. Adjust the amount of milk to achieve your desired consistency.
- 30. Season the mash with salt.
- 31. Add a pinch of freshly grated nutmeg.
- 32. Wash the herbs.
- 33. Shake the herbs dry.
- 34. Chop the herbs.
- 35. Fold half of the herbs into the mashed potatoes.
- 36. Serve the mashed potatoes with the mushroom stew.
- 37. Distribute the sautéed leek rings on top.
- 38. Grind fresh pepper over the dish.
- 39. Sprinkle it with the remaining herbs.
