Ingredients
- 800 g mixed mushrooms (e.g. chanterelles, porcini, chestnut mushrooms)
- 1 onion
- 1 garlic clove
- 0.5 handful parsley
- 50 g butter
- 1 tbsp flour
- 250 ml milk
- salt
- pepper (from the mill)
- 1 drop lemon juice
- 1 pinch ground cumin
- nutmeg
Instructions
- 1. Clean the mushrooms thoroughly and cut them into bite-sized pieces if necessary.
- 2. Peel the onion and garlic and dice them finely.
- 3. Rinse the parsley, shake it dry, and pluck the leaves off.
- 4. Melt 20 grams of butter in a small saucepan.
- 5. Stir the flour into the melted butter.
- 6. Pour the milk into the mixture gradually while stirring constantly.
- 7. Let the sauce simmer for a few minutes until it thickens.
- 8. Melt the remaining butter in a frying pan.
- 9. Sauté the onions and garlic until translucent.
- 10. Add the mushrooms and cook them over medium heat for 5 to 7 minutes until soft.
- 11. Season the mushrooms with salt, pepper, lemon juice, and cumin.
- 12. Finally, adjust the seasoning of the mushrooms to taste.
- 13. Season the prepared sauce with salt, pepper, and nutmeg to taste.
- 14. Plate the mushrooms in bowls.
- 15. Pour the sauce over the mushrooms.
- 16. Garnish the dish with the fresh parsley.
- 17. Serve the mushroom pan immediately.
