🍽️ Marinated Mushrooms in a Jar

Ingredients
- 600 g wild mushrooms (e.g. porcini, chestnut, red-capped)
- 1 sprig rosemary
- 1 sprig lemon thyme
- 2 garlic cloves
- 250 ml white wine vinegar
- 3 juniper berries
- 2 peppercorns
- 1 tsp mustard seeds
- 1 bay leaf
- olive oil (to top up)
Instructions
- 1. Clean the mushrooms thoroughly.
- 2. Cut the mushrooms into bite-sized pieces.
- 3. Rinse the fresh herbs under running water.
- 4. Shake the herbs dry.
- 5. Pluck the herb leaves from the stems.
- 6. Peel the garlic.
- 7. Slice the garlic into thin rounds.
- 8. Pour the vinegar and 250 milliliters of water into a pot.
- 9. Add the spices and herbs to the pot.
- 10. Bring the liquid to a boil.
- 11. Salt the cooking liquid to taste.
- 12. Add the mushroom pieces to the boiling liquid.
- 13. Simmer the mushrooms for 10 minutes.
- 14. Rinse the jars thoroughly.
- 15. Fill the jars with the mushrooms, liquid, and spices.
- 16. Add oil to the jars until they are full.
- 17. Seal the jars tightly.
- 18. Store the jars in a cool, dark place for at least one week.
