🍽️ Creamy Mushroom Soup

Ingredients
- 400 g mixed forest mushrooms
- 1 large onion
- 0.5 bunch chives
- 1 tbsp butter
- 1 tbsp flour
- 100 ml white wine
- 250 ml vegetable broth
- 150 ml whipping cream
- salt
- pepper (from the mill)
Instructions
- 1. Clean the mushrooms with a brush or a soft cloth.
- 2. Slice the mushrooms into thin pieces.
- 3. Peel the onion and dice it into small cubes.
- 4. Wash the chives and cut them into small rings.
- 5. Heat the butter in a large pan.
- 6. Sauté the onion cubes in the butter until they are soft.
- 7. Add the mushroom slices to the pan.
- 8. Fry the mushrooms on all sides.
- 9. Reduce the heat to a medium setting.
- 10. Sprinkle the flour over the mushrooms.
- 11. Stir everything well to distribute the flour.
- 12. Deglaze the pan gradually with the vegetable broth.
- 13. Stir constantly to avoid lumps.
- 14. Add the wine to the pan.
- 15. Let the mixture come to a brief boil.
- 16. Reduce the heat back to a low setting.
- 17. Cover the pan.
- 18. Let the soup simmer for two minutes.
- 19. Add the cream to the pan.
- 20. Cover the pan again.
- 21. Let the soup simmer for another two minutes.
- 22. Season the soup with salt.
- 23. Season the soup generously with pepper.
- 24. Let the soup rest for a short moment.
- 25. Serve the soup hot.
- 26. Garnish the soup with the prepared chive rings.
- 27. Serve with toasted white bread.
