🍽️ Mushroom Tomato Stew

Ingredients
- 1 can peeled tomatoes (approx. 450 g)
- 1 onion
- 2 garlic cloves
- 3 tbsp olive oil
- 2 tbsp tomato paste
- 2 bay leaves
- 400 g mushrooms
- salt
- pepper (from the mill)
- 2 tbsp parsley
Instructions
- 1. Peel the onion and cut it into small cubes. Peel the garlic and chop it finely. Fry both in hot oil in a large pot until they are soft and translucent. Stir in the tomato paste, then add the bay leaf and the tomatoes with their juice to the pot.
- 2. Crush the tomatoes with a knife directly in the pot. Season the mixture with salt and pepper and let it simmer for 10 minutes. Clean the mushrooms and add them after these 10 minutes. Let everything cook for another 10 minutes. Taste the dish and serve it with fresh parsley.
