  1. 1. Wash the thyme and shake it dry. Pluck the small leaves off the stems.
  2. 2. Clean the mushrooms and slice them into thin pieces.
  3. 3. Peel the garlic and chop it finely.
  4. 4. Heat the oil in a pan over medium heat.
  5. 5. Add the chopped garlic to the hot pan and sauté it briefly.
  6. 6. Add the mushroom slices to the pan.
  7. 7. Fry the mushrooms while stirring constantly for 3 to 4 minutes.
  8. 8. Deglaze the pan with the vinegar.
  9. 9. Sprinkle the sugar over the mushrooms.
  10. 10. Continue frying the mixture for another 3 to 4 minutes until the liquid has almost completely reduced.
  11. 11. Season the mushrooms with salt and pepper to taste.
  12. 12. Toast the bread slices in the toaster until golden brown.
  13. 13. Distribute the warm mushrooms evenly over the toast slices.
  14. 14. Sprinkle the finished toast with the fresh thyme leaves and some sea salt.
  15. 15. Serve the toast immediately.
