🍽️ Savory Mushroom Tarte Tatin

Ingredients
- 125 g flour
- 225 ml milk
- 3 eggs
- 1 pinch salt
- 8 shallots
- 250 g mixed mushrooms (e.g. shiitake, button mushrooms, chanterelles)
- 3 tbsp sunflower oil
- 1 tsp fresh chopped thyme
- arugula (for garnish)
Instructions
- 1. Mix the milk, flour, and a pinch of salt in a bowl until smooth.
- 2. Stir the eggs into the batter until fully incorporated.
- 3. Let the dough rest for 20 minutes to swell.
- 4. Preheat the oven to 220 degrees Celsius with top heat.
- 5. Peel the shallots and slice them into rings.
- 6. Wash the mushrooms if necessary and slice them.
- 7. Heat the oil in a large pan.
- 8. Fry the shallots, stirring occasionally, for about 8 minutes until golden brown.
- 9. Add the mushroom slices to the pan.
- 10. Fry the mushrooms for another 6 minutes.
- 11. Season the mixture with salt and pepper.
- 12. Sprinkle fresh thyme over the mixture.
- 13. Distribute the mushroom mixture evenly in the pan.
- 14. Pour the batter evenly over the mushrooms.
- 15. Bake the tart for about 10 minutes in the oven until golden brown.
- 16. Invert the tart onto a plate.
- 17. Garnish the dish with arugula.
- 18. Serve the tart warm.
