🍽️ Spicy Plum Ragout with Rice and Fried Lamb Chops

Ingredients
- 200 g parboiled (natural) rice
- 12 lamb chops
- 2 onions
- 1 garlic clove
- 2 cm fresh ginger
- 400 g plums
- 2 tbsp oil
- salt
- pepper (from the mill)
- 0.25 tsp cinnamon (ground)
- 0.25 tsp cardamom (ground)
- 2 tbsp honey
- 1 small rosemary sprig
Instructions
- 1. Cook the rice in salted water until tender. Follow the instructions on the package.
- 2. Season the lamb chops generously with salt and pepper.
- 3. Peel the onions, garlic, and ginger.
- 4. Finely chop the onions, garlic, and ginger.
- 5. Cut the plums in half.
- 6. Remove the pits from the plum halves.
- 7. Heat oil in a pan.
- 8. Fry the lamb chops in the hot oil.
- 9. Cook the chops for about 2 to 3 minutes per side.
- 10. Remove the cooked chops from the pan.
- 11. Keep the chops warm.
- 12. Sauté the chopped onions, garlic, and ginger in the remaining frying fat.
- 13. Add the plums, cinnamon, cardamom, rosemary, and honey to the pan.
- 14. Simmer the mixture for about 8 to 10 minutes.
- 15. Season the ragout with salt and pepper to taste.
- 16. Plate the rice.
- 17. Add the fried lamb chops.
- 18. Spoon the plum ragout over the top.
