🍝 Spicy Sausage and Corn Ragout with Pasta

Ingredients
- 400 g Penne
- Salt
- 200 g Cabanossi
- 1 Onion
- 1 Garlic clove
- 2 tbsp Olive oil
- 1 tbsp Tomato paste
- 500 g peeled Tomatoes (can)
- 1 tbsp Lemon juice
- 0.5 tsp Sugar
- 0.5 tsp dried Oregano
- Salt
- Pepper (from the mill)
- Paprika powder (mild sweet)
- 200 g Corn kernels (can)
- Chives
Instructions
- 1. Bring water to a boil and add salt.
- 2. Cook the penne pasta in the boiling salted water for 15 to 20 minutes until al dente (firm to the bite).
- 3. Slice the Cabanossi sausages into thin rounds.
- 4. Peel the onion and the garlic.
- 5. Finely dice the onion and the garlic.
- 6. Heat the oil in a pan.
- 7. Sauté the onions and garlic in the hot oil until they become translucent.
- 8. Add the sausage slices and fry them.
- 9. Stir in the tomato paste and fry it briefly.
- 10. Add the peeled tomatoes.
- 11. Crush the tomatoes in the pan.
- 12. Let the sauce simmer gently covered for approx. 20 minutes.
- 13. Season the sauce with lemon juice, sugar, oregano, salt, pepper, and paprika.
- 14. Drain the corn.
- 15. Stir the corn into the sauce.
- 16. Remove the sauce from the heat.
- 17. Let the sauce rest covered.
- 18. Garnish the dish with chive rings.
