  2. 2. Add lightly salted water. Use about twice as much water as rice.
  3. 3. Bring the water to a boil.
  4. 4. Cover the pot.
  5. 5. Let the rice swell on very low heat for approx. 25 minutes.
  6. 6. Wash the leek.
  7. 7. Remove the tough ends from the leek.
  8. 8. Cut the leek into rings.
  9. 9. Wash the chili pepper.
  10. 10. Cut the chili pepper lengthwise.
  11. 11. Remove the seeds and all white inner membranes of the chili.
  12. 12. Cut the chili into fine rings.
  13. 13. Blanch the tomato briefly with boiling water.
  14. 14. Shock the tomato with cold water.
  15. 15. Remove the skin from the tomato.
  16. 16. Quarter the tomato.
  17. 17. Remove the seeds from the tomato.
  18. 18. Cut the tomato into fine cubes.
  19. 19. Cook the leek for 4 minutes in boiling salted water.
  20. 20. Drain the leek.
  21. 21. Let the leek drip dry.
  22. 22. Cut the meat into bite-sized pieces.
  23. 23. Season the meat with salt and pepper.
  24. 24. Fry the meat pieces in hot oil until well browned.
  25. 25. Fry the meat pieces on each side for approx. 2 minutes.
  26. 26. Remove the meat from the pan.
  27. 27. Keep the meat warm.
  28. 28. Fry the chili briefly in the remaining oil.
  29. 29. Add the rice to the chili.
  30. 30. Fry the rice briefly.
  31. 31. Stir in the sweet and sour sauce.
  32. 32. Add the leek.
  33. 33. Add the tomatoes.
  34. 34. Add the meat.
  35. 35. Let everything heat up.
  36. 36. Season to taste with salt and pepper.
  37. 37. Sprinkle the dish with chopped chives.
  38. 38. Serve the dish.
