  1. 1. Line a baking pan with baking paper. Peel the carrots and grate them finely. Whisk the quark and eggs together using a hand mixer. Stir in the almonds, flaxseeds, oat bran, soy flour, instant oats, baking powder, sunflower seeds, and grated carrots into the quark-egg mixture.
  2. 2. Season the dough with bread spice and salt. Transfer the mixture to the pan and smooth the top. Bake the bread in a preheated oven at 180 degrees Celsius (160 degrees Celsius fan-assisted or gas mark 2 to 3) for 70 to 80 minutes.
  3. 3. Let the bread cool down for a short while. Turn it out of the pan and allow it to cool completely on a wire rack. Slice into portions before serving.
