🍽️ Spicy Carrot Protein Bread

Ingredients
- 2 Carrots
- 250 g Low-fat quark
- 4 Eggs
- 250 g ground almonds
- 130 g Flaxseeds
- 20 g Oat bran (3 heaped tbsp)
- 30 g Soy flour (2 tbsp)
- 30 g Melting flakes (4 tbsp)
- 1.5 packet Baking powder
- 60 g Sunflower seeds
- 0.5 tsp Bread spice
- 1 tsp Salt
Instructions
- 1. Line a baking pan with baking paper. Peel the carrots and grate them finely. Whisk the quark and eggs together using a hand mixer. Stir in the almonds, flaxseeds, oat bran, soy flour, instant oats, baking powder, sunflower seeds, and grated carrots into the quark-egg mixture.
- 2. Season the dough with bread spice and salt. Transfer the mixture to the pan and smooth the top. Bake the bread in a preheated oven at 180 degrees Celsius (160 degrees Celsius fan-assisted or gas mark 2 to 3) for 70 to 80 minutes.
- 3. Let the bread cool down for a short while. Turn it out of the pan and allow it to cool completely on a wire rack. Slice into portions before serving.
