  1. 1. Grate the cheese finely.
  2. 2. Mix the flour, baking powder, and paprika in a bowl.
  3. 3. Make a well in the center of the flour mixture.
  4. 4. Pour the cream into the well.
  5. 5. Cut the butter into small cubes and place them on the edge of the flour mixture.
  6. 6. Sprinkle the grated cheese over the butter.
  7. 7. Quickly knead the ingredients into a smooth shortcrust pastry dough.
  8. 8. Wrap the dough in cling film and chill it in the refrigerator for about 1 hour.
  9. 9. Divide the dough into three equal parts.
  10. 10. Take one piece of dough and roll it out on a floured surface to a thickness of approx. 3 mm.
  11. 11. Cut out cookies from the dough using a cookie cutter.
  12. 12. Whisk the egg yolk with 2 to 3 tablespoons of water.
  13. 13. Brush the cookies with the egg yolk and water mixture.
  14. 14. Sprinkle the cookies with chopped pistachios, coarse salt, cumin, poppy seeds, or sesame seeds as desired.
  15. 15. Line a baking tray with baking paper.
  16. 16. Preheat the oven to 180 °C (160 °C for fan-assisted or gas mark 2–3).
  17. 17. Bake the cookies in the preheated oven for 10 minutes until golden yellow.
  18. 18. Repeat the process with the remaining dough pieces until all are used up.
