🍰 Savory Cheese Crackers

Ingredients
- 175 g Parmesan (1 piece)
- 300 g spelt wholemeal flour
- 1 tsp baking powder
- 1 tsp paprika powder
- 2 tbsp whipping cream
- 200 g cold butter
- 2 egg yolks
- 1 tbsp chopped pistachio kernels
- 1 tsp coarse sea salt
- 1 tbsp caraway seeds
- 1 tbsp poppy seeds
- 1 tbsp sesame seeds
Instructions
- 1. Grate the cheese finely.
- 2. Mix the flour, baking powder, and paprika in a bowl.
- 3. Make a well in the center of the flour mixture.
- 4. Pour the cream into the well.
- 5. Cut the butter into small cubes and place them on the edge of the flour mixture.
- 6. Sprinkle the grated cheese over the butter.
- 7. Quickly knead the ingredients into a smooth shortcrust pastry dough.
- 8. Wrap the dough in cling film and chill it in the refrigerator for about 1 hour.
- 9. Divide the dough into three equal parts.
- 10. Take one piece of dough and roll it out on a floured surface to a thickness of approx. 3 mm.
- 11. Cut out cookies from the dough using a cookie cutter.
- 12. Whisk the egg yolk with 2 to 3 tablespoons of water.
- 13. Brush the cookies with the egg yolk and water mixture.
- 14. Sprinkle the cookies with chopped pistachios, coarse salt, cumin, poppy seeds, or sesame seeds as desired.
- 15. Line a baking tray with baking paper.
- 16. Preheat the oven to 180 °C (160 °C for fan-assisted or gas mark 2–3).
- 17. Bake the cookies in the preheated oven for 10 minutes until golden yellow.
- 18. Repeat the process with the remaining dough pieces until all are used up.
